Today’s breakfast idea is plantain and scrambled eggs(with a little twist) . Plantain is a meal eaten regularly in Nigeria. Before stating this simple yet delicious recipe, I’ll like to state few of the health benefits of plantain.
• It is a great source of potassium.
• It helps to boost the immune system and promotes healthy brain function.
• It is a great source of calcium and beta-carotene.
Now to the business of the day. You will need ;
• Plantain ( any number you want).
• Plum Tomatoes.
• Scotch bonnet.
• Pumpkin leaves(locally known as “ugwu” where I’m from. Where this cannot be found, frozen spinach is a good substitute.
• Onion.
• Vegetable oil.
• Salt
Now for the process;
• Peel plantain and cut into desired size.
• Put water in a pot to boil and add plantain with little salt.
• Cook till tender and Sieve.
• Slice Tomato, pepper,onion and pumpkin leaves.
Heat up the frying pan and add a teaspoon of vegetable oil.
• When hot, add onion, Tomato and pepper. Allow to sauté and add the leaves. Whisk eggs in a bowl and add a pinch of salt and pour in the frying dish. Allow to cake.
Voila… your meal is ready. Do try this at home. You’ll be surprised how tasty it is.
