I baked vegan and gluten free cookies for tomorrow's picnic!
What do you need for your healthy cookies:
• ¾ cup of pumpkin puree
• 3 tablespoons of coconut oil
• a few tablespoons of coconut sugar (to taste)
• 1 ½ cup of gluten free oatmeal
• 1 cup of rice flour
• 1 cup of corn flour
• 1 teaspoon of baking soda
• 1 teaspoon of cinnamon
• ½ teaspoon of ginger
• 1/4 teaspoon of Himalayan salt
• cup of dried cranberry
• 100 g of chopped dark chocolate
Mix all ingredients and bake cookies for 20 minutes at 180 °C
