Refreshing Cherry-Banana Ice Cream

During the summer, there's nothing quite like a refreshing, guilt-free treat to cool you down. Enter cherry nice cream, a vegan delight that captures the essence of summer in every bite. This delicious dessert is not only a healthier alternative to traditional ice cream but also incredibly simple to make, using just a handful of wholesome ingredients.

One of the best things about this recipe is its versatility. By using frozen bananas as the base, you get a creamy, smooth texture that mimics the richness of dairy ice cream without any of the guilt. The natural sweetness of the bananas also means you can skip the added sugars if you prefer, making this a truly healthy indulgence. I like to add a touch of agave syrup for an extra hint of sweetness, but feel free to leave it out if you're aiming for a completely sugar-free treat.

Another great tip for making cherry nice cream is to always have a stash of frozen bananas on hand. Bananas are the cornerstone of many vegan ice cream recipes, providing both texture and natural sweetness. Whenever your bananas start to overripen, simply peel and freeze them for future use. The same goes for cherries and other fruits – having a variety of frozen fruits ready to go means you can whip up a batch of nice cream anytime the craving strikes.

What makes this recipe even more appealing is how customizable it is. While cherries are a fantastic choice for their vibrant color and juicy flavor, you can easily swap them out for other berries or fruits you have on hand. Strawberries, blueberries, mangoes, or peaches – the possibilities are endless. Experiment with different combinations to discover your personal favorite, and don't be afraid to get creative with toppings like nuts, coconut flakes, or a drizzle of chocolate.

Cherry nice cream is more than just a summer treat; it's a testament to how simple, natural ingredients can come together to create something truly special. It's a recipe that invites you to enjoy the sweet, fresh flavors of the season while nourishing your body with wholesome, plant-based goodness.

You will need:
For 2-3 servings
● 1 frozen banana, sliced (120 g.)
● 100 g. frozen pitted cherries
● 100 ml. full-fat coconut milk (coconut cream from a can)
● 1 tablespoon of agave syrup (optional)
● A few drops of vanilla flavour

Preparation
1.Blend all the ingredients with a hand or other blender until smooth.

2.The ice cream can be eaten straight away or, if you want it thicker, it can be kept in the freezer.
3.If you are still freezing the ice cream, keep stirring the ice cream every 30 minutes for the first 2-3 hours in the freezer to prevent ice crystals from forming.

4.If the ice cream is kept in the freezer overnight, it can be left at room temperature for a few minutes after removal to thaw slightly.

Enjoy!
