Lemony Delight: Vegan Lemon Cake with Poppy Seeds

You will need:
This recipe uses a 17cm diameter round baking tray (with removable edges)
• 200 g. wheat flour
• 120 g. sugar
• 50 ml. coconut oil
• 200 ml. plant-based milk (sweetened oat milk is used in the recipe)
• 70 ml. freshly squeezed lemon juice
• 1 tablespoon of grated lemon peel
• 2 teaspoons of baking powder
• ¼ teaspoon of salt
• 2 teaspoons of poppy seeds
• 1 teaspoon of ground cloves
• Powdered sugar for dusting

Preparation

  1. Heat the oven to 180°C.
  2. Grate about 1 tablespoon of lemon peel.
  3. Make fresh lemon juice from about 1,5 lemons (70 ml.)
  4. Mix dry ingredients - flour, sugar, baking powder, ground cloves, poppy seeds, salt. Mix well.
  5. Add melted coconut oil, milk, fresh lemon juice, grated lemon peel to the mixture and mix well.
  6. Grease the baking tray with coconut or other oil (if the edges of the mold do not come off, you can line it with baking paper instead of oil to make it easier to remove the cake).
  7. Pour the batter into the baking form and bake the cake for 35-40 minutes, or until a wooden skewer inserted into the cake comes out clean and dry.
  8. After removing from the oven, leave to cool for 10-20 minutes, then remove from the baking form and sprinkle with powdered sugar before serving.

The cake goes really well with some vegan ice-cream, by the way 😏🍦
