Young Jackfruit Vegetable Coconut Milk Soup for Family Lunch




Have you ever cooked or processed jackfruit into a menu for lunch or dinner together? So here I am processing watermelon into one of our family's lunch menus. I deliberately chose jackfruit that was underripe because it was to be processed as a side dish for rice, if you have never tried it you can try it with the recipe that I share.



Young jackfruit is of course tastier and sweeter to cook as a side dish for rice. It also has a very soft texture, especially jackfruit that has quite a lot of children, so it is very tasty when used and processed as a side dish for rice, the taste of each housewife so I process it in here, namely the fat sauce can also be processed into Coco sauce and others according to your taste that you like.

I got this jackfruit behind my house. It also happened that there was only one fruit, so I immediately picked and processed it into our family's lunch menu. I very rarely process this jackfruit as a side dish for rice because my parents-in-law don't like it but can't eat it because it can cause side effects that make my mother-in-law sick so of course she very rarely eats a side dish like this.



I don't know what to cook for our family's lunch menu anymore because if I cook the same menus every day, my husband and family will definitely feel bored and won't enjoy it, so I thought about making jackfruit for today's lunch menu. The materials needed are also not difficult to obtain because they are all around my house so I don't have to go to the market to buy the materials needed.



Materials to make it



  • 1/4 young jackfruit
  • 1 grain of old Coconut
  • Water 1 liter (for boiling jackfruit)
  • 5 cloves of red onion
  • 2 cloves of garlic
  • 5 pieces of cayenne pepper
  • 10 curly red chilies
  • 1 segment of turmeric
  • 1 teaspoon coriander
  • 1/4 teaspoon of pepper
  • 2 Sunti acids
  • 1 lemongrass
  • 2 stalks of temurui leaves/curry leaves

Steps to create

Step 1

Peel the skin of the jackfruit, remove the middle, cut into small pieces or according to taste.



Step 2

After cleaning, cook it first until it boils.



Step 3

After boiling remove the drain and set aside.



Step 4

Put the ingredients in the blender and grind all the spices.



Step 5

Then put the jackfruit that has been strained earlier into the pan, add the ground spices, thinly sliced onions, 1 stalk of lemongrass and temurui/curry leaves.



Step 6

Take grated coconut and make coconut milk.



Step 7

Add the coconut milk to the pan which already contains the vegetables and the ground spices.



Step 8

Cook until the coconut milk is cooked, stir evenly so that the coconut milk doesn't get lumpy.



Step 9

Add salt, I added as much as 1 teaspoon because this is gravy so that it is more flavorful or according to your taste.



Step 10

When it is cooked remove and serve.



Jackfruit can not only be used as a sweet food such as compote and other similar things that are called snacks. It turns out that this jackfruit can also be used as a side dish for rice which has a very good taste. To make a side dish for rice, you have to choose a young jackfruit so that the texture of the fruit is still soft, not too hard. When it is ripe, it cannot be used as a side dish. This is really the lunch menu our family has been waiting for.
