Blueberry And Blackberry Keto Crumble

Look how amazing this turned out! This time I've decided to write the entire recipe for people interested in replicating it, as some people commented on my previous post about Keto bread.


Ingredients:

2 cups blueberries (about two hand-fulls I guess)
2 cups blackberries
1/4 cup granulated erythritol or any other keto-friendly sweetener - or you can skip this if you don't care
1 table spoon of lemon juice
1 table spoon vanilla extract
1/2 cup almond flour
1/2 cup coconut flour
1/2 cup chopped pecans
1/4 cup butter
1/4 table spoon of salt

Steps:

  • Preheat the oven to 180°C. Grease a baking dish with butter, ghee or cooking spray. You can use a ceramic bowls like mine if you have them instead. It means you can serve them directly like that if you have guests.

  • In a large mixing bowl, combine the blueberries, blackberries, erythritol, lemon juice, and vanilla extract. Mix well and transfer the mixture to the prepared baking dish or bowls.

  • In a separate mixing bowl, combine the almond flour, coconut flour, chopped pecans, butter, and salt. Use your fingers to crumble the mixture until it resembles coarse crumbs.

  • Spread the crumble mixture over the fruit mixture in the baking dish or bowls, making sure to cover the fruit evenly.

  • Bake for 30-35 minutes, or until the top is golden brown and the fruit is bubbling.

  • Remove from the oven and let it cool for a few minutes before serving. It's ready!

Pro tip: If you can find some keto friendly ice cream, you would have arrived at the perfect match.
