Hola amigos el viernes para seguir celebrando las fiestas patrias mi yerno me dijo preparara unas empanadas chilenas, yo nunca las hab铆a hecho y tampoco las hab铆a probado y de verdad son s煤per ricas.
Con la emoci贸n de hacerlas por primera vez se me olvid贸 tomarle fotos a la preparaci贸n del pino y de la masa, pero igual se las quise compartir
Para la elaboraci贸n del pino
Para estas empanadas yo use 750 grs de posta rosada picada en pedacitos peque帽os y 250 grs de carne molida,2 kilos de cebollas picadas en cuadritos peque帽os, 4 cucharaditas de aji color,2 cucharaditas de comino molido,4 cucharaditas de oregano molido, 1 taza de aceite vegetal, 4 cucharaditas de sal.
Procedimiento
Pongo una olla a la candela y echo la taza de aceite, cuando est茅 caliente echo la cebolla, el comino, la sal,el aj铆 color y el oregano, mezclo bien y cocino durante 45 minutos revolviendo constantemente a fuego medio, pasado ese tiempo ya la cebolla est谩 bien cocida y se a reducido,es el momento de agregarle el merk茅n para darle un toque picante se mezcla bien y se agrega la carne que se cocinara a fuego medio durante 45 minutos, pasado ese tiempo se le agregan 2 cucharadas de harina de trigo y un poquito de agua se mezcla bien y se cocina por 3 minutos, se deja reposar y se guarda en la nevera hasta el otro d铆a, eso es para que quede m谩s sabrosa y es la manera correcta de preparar las empanadas.

For these empanadas, I used 750 grams of beef tenderloin, chopped into small pieces, and 250 grams of ground beef, 2 kilos of onions, chopped into small squares, 4 teaspoons of paprika, 2 teaspoons of ground cumin, 4 teaspoons of ground oregano, 1 cup of vegetable oil, and 4 teaspoons of salt.
Procedure
I put a pot on the stove and add the cup of oil. When it is hot, I add the onion, cumin, salt, paprika, and oregano. I mix well and cook for 45 minutes, stirring constantly over medium heat. After that time, the onion is well cooked and has reduced. it is time to add the merk茅n to give it a spicy touch. Mix well and add the meat, which will cook over medium heat for 45 minutes. After that time, add 2 tablespoons of wheat flour and a little water, mix well and cook for 3 minutes. Let it rest and store it in the refrigerator until the next day. This is to make it more flavourful and is the correct way to prepare empanadas.
Para la masa
1,5 kgs de harina de trigo
2 huevos
562,5 CC de agua hirviendo
150 CC de vino blanco
30 gramos de sal
195 grs de Mantequilla derretida
Procedimiento
Se echa la harina en un bol, se le agrega la sal y los huevos y se mezcla con una cuchara de madera, luego se le echa el vino y la mantequilla derretida y se sigue mezclando con la cuchara de madera, luego se le va echando el agua hirviendo poco a poco cuidando no quemarse y cuando est茅 bien unida toda se lleva a la mesa y se amasa bien por 5 minutos.
Yo la dej茅 reposar tapada con un pa帽o 3 horas
For the dough
1.5 kg wheat flour
2 eggs
562.5 cc boiling water
150 cc white wine
30 grams salt
195 grams melted butterProcedure
Put the flour in a bowl, add the salt and eggs and mix with a wooden spoon, then add the wine and melted butter and continue mixing with the wooden spoon. Next, gradually add the boiling water, taking care not to burn yourself, and when everything is well combined, transfer to a table and knead well for 5 minutes.
I let it rest covered with a cloth for 3 hours.
Para el relleno se necesitan:
Aceitunas, huevos y pasas.
For the filling, you will need:
Olives, eggs, and raisins
Listo todos los ingredientes procedi a estirar la masa lo m谩s fina que pude con una botella por que aqu铆 no tengo rodillo y con la ayuda de una tapa y un cuchillo fui cortando los discos o redondos para hacer las empanadas.
Once all the ingredients were ready, I rolled out the dough as thinly as I could with a bottle, as I don't have a rolling pin here, and with the help of a lid and a knife, I cut out discs or circles to make the empanadas.
A medida que iba cortando iba armando las empanadas, (puse a precalentar el horno por 15 minutos a 220 grados cent铆grados)
Puse 3 cucharadas de pino sobre la masa un pedazo de huevo, 2 aceitunas, la empanada lleva una generalmente pero como a m铆 me gustan muchos las aceitunas a varias les puse 2 y 2 pasas, le ech茅 agua al borde y pegue el borde que queda sin rellenar doble primero un lado despu茅s el otro y luego la parte de abajo,antes hacer este doblez volv铆 a echar agua para que pegara, la pinte con huevo y con un palillo le abr铆 un hueco en el centro para que no se rompieran mientras se horneaban, las pinte con huevo, hice 8 en total y las met铆 al horno por 30 minutos.

Luego hice 14 est谩 las doble de otra forma, est谩s las frei, seg煤n mi yerno que es chileno le gustan m谩s de horno como dicen ellos por que llenan m谩s y no caen pesadas pero a m铆 esposo @manros11 y a mi nos gustaron m谩s fritas.

El secreto del pino es cocinar bien la cebolla para no repetirla y dejarlo reposar de un d铆a para otro para que quede bien gustoso.
De verdad quede muy satisfecha con el resultado y para ser mi primera vez me quedaron muy bien,como todo lo que se hace con amor y dedicaci贸n.
Muy feliz de compartir la tradici贸n de el pa铆s que recibi贸 a mis hijos y conocer m谩s sobre sus costumbres y gastronom铆a.
Se pueden acompa帽ar con la salsa de su preferencia o con pebre(cebolla,tomate, piment贸n,cilantro,lim贸n,sal,merken y aceite.
