Sesame seed bread sticks from Turkish Cyprus

Over the summer I travelled to Turkish Cyprus and I was very happy to find this dry bread that I am going to recreate tomorrow using Einkorn flour @cliodhna Along with black tea with lemon, yoghurt, pastries and olives this was one of the most interesting food. It was Kritsenia or Simit or had its own name.

This is a bread dough (sometimes with tahini added) and covered with both black and white sesame seeds before baking. It is left to dry and becomes a crispy, rusk like texture perfect for cheese olives oil and salads.
