When life gives you bananas make a banana nice cream for breakfast! If you have been following my blog a little then you may know we are having a banana overload. Though there isn't really a banana season, they grow year-round, at this point, we have so many trees ready for harvest.

Happy days, happy friends and happy neighbors..... and the best part...ICE CREAM FOR BREAKFAST! Yipee!!!

How are you guys enjoying the summer months? This week has been a bit busy as we are turning our tuk-tuk into a mobile bakery. While the original plan was opening a coffee shop as soon as possible, we might have found a few joint ventures but these will take time so the coffee shop is on hold for a few months.

But that isn't stopping us to take the bakery to the next level. his time we are going Khmer-style with a food tuk-tuk. We just build a box on our tuk-tuk and made it drivable. In the coming 2 days a friend is going to build some shelves in it... so next week we'll have a movable bakery.

Drove it to Kep yesterday to get the shelves done during our weekend. Made a little movie which I will post later. Absolutely loved the drive..... although I got funny looks the whole way. Khmer's are not used seeing a foreigner drive those things. Let stand a girl.... but hey adapt to your environment right?

Feeling more Khmer every day. After learning how to read and write their strange language, I am driving a tuk-tuk now too. Like mentioned I'll upload a little movie later but here's a pic of me in action.... sorry for the crapy quality.... taken with my husband's phone.

But hey I promised you a banana nice cream recipe. So enough chitchatting about our Cambodian bakery adventures. Let's get on with the nice cream.

CHUNKY MONKEY BANANA CHOCOLATE CHIP ICE CREAM 🐒 🍌🍨


INGREDIENTS


Frozen banana chunks, as much as you like
Raw cacao nibs or chopped vegan chocolate
Nut milk of your choice (I used coconut milk)
Toppings of your choice (I used a mix of dried goji berries, mulberries, and cranberries; sliced almonds, and coconut flakes)

DIRECTIONS


  1. Peel, chop and freeze the bananas.
  2. When frozen, add them to a blender and blend adding nut milk to desired texture of a soft serve ice cream. Use a tamper to push the bananas into the blades.
  3. Sir in the cacao nibs or vegan chocolate chips. Serves immediately or add to the freeze for an hour or so if you prefer a harder consistency.
  4. Top with your favorite toppings. I used dried goji berries, cranberries, mulberries, sliced almonds and coconut flakes.
