I made this orange marmalade on Sunday. It turned out very well. Here is my recipe for this gingered marmalade. You can easily make and enjoy it in the months to come.
Orange Marmalade With Fresh Ginger
What We'll Need:
- 8 oranges
- 4 cm piece ginger
- 1 lemon
- 2 cups sugar
Wash the oranges very well. Grate some orange zest from 5 of the oranges. Peel all of the oranges, remove the seeds and cut into small pieces. Peel and grate the ginger.
Put the oranges, orange zest, ginger and the juice of one lemon into a big pot. Cook and bring to boil. Let it boil for about 10 minutes watching out that it doesn’t caramelise. If needed, add some water. Cook on lower heat for about 20 minutes. Add the sugar. Cook to low-medium heat until it reaches the desired consistency.
Note: I had read somewhere that the white parts of the orange skin contain plenty of pectin. So I added quite a few big pieces of the white parts so that they would help the marmalade to get a jellied texture, and then took them out just before adding the sugar.
