Grilled Zucchini

  • 4 medium zucchinis, cut into 1/2-inch rounds
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Grated Parmesan cheese, for serving

Cut zucchinis into 1/2-inch rounds, brush with olive oil and season with salt and pepper. Grill until tender and charred, about 2-3 minutes on each side. Serve with lemon wedges and freshly grated Parmesan cheese.

Zucchini Fritters

  • 2 medium zucchinis, grated
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Olive oil or cooking spray, for frying
  • Sour cream or dipping sauce, for serving (optional)

Grate 2 medium zucchinis, squeeze out the excess moisture and mix with 1/2 cup of flour, 2 beaten eggs, 1/4 cup of grated Parmesan cheese, and salt and pepper to taste. Zucchini Lasagna

  • 4 medium zucchinis, sliced thinly
  • 1 cup ricotta cheese
  • 1 cup grated mozzarella cheese
  • 2 cups marinara sauce
  • basil, to decorate

Slice zucchinis thinly and use them as a replacement for lasagna noodles. Layer the zucchini with a mixture of ricotta cheese, grated mozzarella cheese, and your favorite marinara sauce. Bake at 375°F for 25-30 minutes, or until the cheese is melted and bubbly.
