As we're drawing close to Christmas, I hope you'll have plans on celebrating it with family and friends. Despite the covid-19 and pandemic rules, we still have to prepare for it.

Well, it's another day for me in the kitchen, and I'm delighted to share my cooking recipes and skills with you. Although, I'm still improving.

Today's cooking is homemade Steamed Beans Pudding or also known as Moin Moin here in Nigeria.

Moin Moin is a Nigerian steamed bean pudding, which is made from a mixture of washed and peeled black-eyed beans, onions, and fresh pepper. It is known for its rich protein nutrients, and helps in weight loss, diabetic patients, and also has antioxidant properties.

This food is well eaten by Nigerians, and can also be found in Ghana, and Sierra Leone. Know as "Alele" and "Olele" respectively.

Moin Moin can be served with cassava flakes(Garri), African Corn Pudding(Pap, Akamu, Ogi), Rice, and others. I love this food because of its versatility with other meals. So my friend sit tight and read carefully as I shared with you my recipe.

Here are the ingredients I used in today's cooking.

They include Beans flour, crayfish, fresh pepper, onions, eggs, seasoning cubes, palm oil, and warm water.

Firstly, pour the beans flour in a bowl depending on the quantity you want to make. Beans flour isn't the only way to prepare steamed bean pudding. You can wash the beans and peel off the black-eyed peas, or pound the beans. But this will be stressful and time-consuming. So I prefer to use bean flour because it's less time-consuming.

After pouring the bean flour into a bowl. Then pour warm water into the bowl. Don't use hot water because it will harden the bean flour. The quantity of water should be decided by you. But it shouldn't be too much. I recommend two and a half bowls of warm water.

Then stir with a wooden spatula. Stir it gently and round. So that the bean flour will be dissolved into a liquid paste.

After stirring, add the crayfish, ground fresh pepper, dissolved seasoning cubes, sliced onions, eggs, and palm oil. Then stir, till it is completely mixed.

Now, wash the bean pudding container and pour the mixed liquid bean paste into the containers.

place them properly in the pot to avoid spillage.
Place a clean pot on the gas cooker, and fill half of the pot with water. And gently place those containers into the pot. Arrange them properly. And leave it to boil.

This should take forty-five minutes or an hour or less depending on the quantity of the moin moin mixture in the container. Check for readiness with a toothpick. Insert it into the middle of the steamed beans pudding. Once you have confirmed its thickness and taste. Yummy!!!
