Helado sedoso de mora
Hello, bees! This is very funny (not really) I started the recipe yesterday, which was a hot day, and I couldn't do the first blending or put it to freeze because the power went down. I was like yeah, no surprise there, I'll do it tomorrow... Today is cold! The sun has been hiding this whole time, the sky is gray, and yeah, "cold" I still can eat ice cream, but still haha. Anyway, my dad brought some blackberries, we made juice and now we wanted ice cream, and I took the chance to taste if I can make a fruit ice cream creamy enough without milk.

Me dije que sí, que no hay sorpresa, que lo haré mañana.... ¡Hoy hace frío! El sol ha estado escondido todo este tiempo, el cielo está gris, y sí, "frío" todavía puedo comer helado, pero igual jaja. En fin, mi papá trajo unas moras, hicimos jugo y ahora queríamos helado, y aproveché para probar si puedo hacer un helado de frutas lo suficientemente cremoso sin leche.

Primero, licua la mora con 2 tazas de agua y cuélala.
Luego, viértelo en una olla y cocínalo con 1 taza de azúcar. Cocina hasta que empiece a burbujear, muy sutilmente, no esperes a que haga grandes burbujas, sólo necesitamos que el azúcar se derrita completamente. Notarás que la espuma blanca de la parte superior se despeja muy fácilmente cuando la movemos.

Ahora pon en otra olla 2 tazas de agua con 1/2 taza de azúcar, y el zumo de limón, cuidado, en puede quedar demasiado agrio, sáltalo si quieres; una vez que empiece a hervir, añade la maicena mezclada con un poco de agua y deja que espese. en este punto, añade la mora que ya hemos cocinado, mezcla y prueba el dulzor, mientras está en el fuego es el momento de hacer cualquier cambio. Ahora sacarlo del calor y dejarlo enfriar.
Cuando enfríe, licuamos ¿Ves el color diferente? (muy rojo y luego rosa) Licuamos para poner mucho aire, lo que ayudará también a romper el hielo y hacerlo sedoso. Vierte en un recipiente, si es plano se congela más rápido. 2 horas después, romper toda la superficie con un tenedor, luego quitar el fondo también, mezclar muy bien, rompiendo el hielo y poner en el congelador de nuevo.

Once blended there would be no more big pieces of ice, it turns out super smooth. Put it back to the container and freeze one last time for a few hours before serving.
You still can repeat the process again and make it even smoother but I think this step is creamy enough.
3 horas después, o de un día para otro como me pasó a mí, saca del congelador, puedes ver cuando lo sacas que hay grandes trozos de hielo de nuevo. Ahora pon el helado en la licuadora. Si tu licuadora no tiene mucha potencia, hazlo de a poco.
Una vez licuado ya no habrá trozos grandes de hielo, queda súper suave. Vuelve a ponerlo en el recipiente y congela una última vez durante unas horas antes de servirlo.
Todavía puedes repetir el proceso de nuevo y hacerlo aún más sedoso pero creo que con este paso ya está lo suficientemente cremoso.
To serve, I don't know, I'll eat it right from the container hahaha just kidding, it can be good with any syrup or mint leaves.

Para servir, no sé, me lo comeré directamente del envase jajaja es broma, puede quedar genial con cualquier sirope u hojas de menta.
