This is an extremely easy recipe for those of you who don’t have sugar in their diet and want to prepare an easy effortless dessert!
Ingredients: Just three! 400gr of coconut cream, 600gr no pip dates, 300gr of no milk no sugar Baker’s chocolate - I used one with stevia. Also I added all my non sugar non milk chocolates I had in my fridge!
In your food processor, add the dates and the coconut cream and mix until you get an homogenized mixture. Add some baking paper on the bottom of a tub and spread your mixture. Chose a size that will allow a 2cm height of the mixture so that in the end they form a medium sized choco bite. Put it in the fridge to freeze it (for about a couple of hours).
After your mixture is ready, proceed with a bain marie with your Baker’s chocolate i.e. put some water in a pan, place it on a hot stove and let it come to boil. Add a glass pot on top of the boiling water, place the chocolate in pieces and allow it to melt in medium fire while mixing with a ladle. Don’t allow the glass pot to touch the boiling water. Once ready, take it off the fire.
Take your dates’ mixture out of the fridge and cut them in small bites. Bathe each one of the bites inside the warm chocolate using two forks and place them carefully on α tray covered with baking paper. Put the tray in the fridge to strengthen the bites. After a couple of hours your dessert is ready.
