I actually believe that slowly we are entering that era where we are becoming more and more aware abut what we are putting in our bodies and we are finding ways to eat as healthy as we possibly can. Even though there is so much hype and love for the junk food, I feel like there is a whole revolution going on around healthy eating, yoga, a simpler more serene life.
Since I was 14 years old, I have had to constantly struggle with health issues but this year has been especially hard on me. Hence, I took a resolution of trying and eating as healthy as i possibly can and I am always trying to come up with healthy alternatives for everything. I know that I am a person who loves to snack a lot and I can never eat too much food at one go. Therefore I came up with this particular sandwich, it is super healthy and is actually kind of filling. It is excellent for say a lunch or an evening snack or even an afternoon snack.
The Rocket sandwich
Note that I replaced soda with a glass of sparkling water with lemon.
Ingredients:
- Two pieces of whole meal bread ( I took a sunflower whole meal bread, but you can take any you like.)
- Feta cheese
- Rocket salad
- Tomato
- Cucumber
Recipe:
Take two pieces of the bread and remove the crust, you can leave it on if you are a fan of the crust, I loathe it so I generally get rid of it. On one of the pieces, spread some feta cheese. On top of this put a generous amount of your rocket salad (gotta eat them green things!).
Now, cut up two big pieces of tomato and four or five round pieces of cucumber. You can use more pieces of both the tomato as well as the cucumber depending on what you like.
This is optional but you can add a few pieces of yellow bell pepper on top of it. Top it with the other piece of bread and there you have it. Enjoy his healthy and freakin delicious sandwich. It is easy to start the change small and once you do you will start noticing a difference in how your body feels as a whole. You know what they say, "You are what you eat".
