First I need to decide what music needs to accompany my kitchen endeavors... {whistles tunelessly whilst scanning brainwaves}
Alright, we will settle for a PIE song ... see what I have done here? {smile}
My good lady is away for a few days so I took the opportunity to prepare a lenyil dish. I love lentils ... she dislikes them intensely !
Who can resist a delicious dhal dish with all its aromatic flavors?
This is a sort of 'deconstructed' pie and contains no gravy.
The spices are up to the individual ... I used 2 teaspoons each of cumin, coriander and smoked paprika.
Sprinkle spices over the dish, season, and just before placing tray into the preheated oven (325 Fahrenheit) drizzle the liquid over the vegetables.
Separate from this, roll out some flaky pastry to about 3 mm's thick and in the shape of a rectangle.
Make a 'border' by cutting into the pastry around the edges but not through the pastry. Use a fork to punch holes in the pastry to prevent it rising too much
Place both trays in the oven and bake for 30 minutes, swopping the trays around if placing one above the other.
While the pastry and vegetables are baking make a base mix of full cream plain (Bulgarian) yoghurt and basil pesto .... at a 2-1 ratio yoghurt to pesto ( I used 200 / 90 gms)
In case my pastry description was not clear ... the above picture should explain.
Cover the pastry liberally with the yoghurt mixture .....
Top with the vegetables and serve .... mission accomplished
It was very tasty but I err'rd with the thickness of my pastry and it was a bit dry. I made my pastry 1mm thick.
Thanks for stopping by, as always I really appreciate it.
