When it’s pissing rain, and can’t barbecue on your limited space apartment balcony. Yet, you’re craving BBQ chicken thighs…
You improvise, with oven baked BBQ Chicken!
Recipe:
Season bone-in, skin-on chicken thighs with salt, pepper, granulated onion, granulated garlic, ancho chili pepper and smoked paprika. Drizzle and toss in clarified bacon butter and place in a baking dish, skin side up! Slide into a 425°F oven and bake for 35 minutes. Pull the chicken from the oven and set aside. Leave the drippings to reduce in the oven. Meanwhile, set a baking rack on top of baking dish. After 6 minutes of reducing, return the chicken (skin side down) on the rack. Baste with BBQ sauce and return to an oven reduce to 368°F. After 8 minutes, flip the chicken, baste with sauce and bake skin side up for 4 minutes. Pull the chicken and let it rest for 7 minutes… Then, snap pics, share with friends, post on social media, all while your chicken gets cold… enjoy!
