Hello you, hungry side of Hive, how are you?
A few days ago I saw a post, here on Hive, with this recipe. I can't remember the user, but I decided to give it a try. It's easy and fast to make, tastes delicious and goes well with milk. My little one also liked them.
Let's jump right in!
Ingredients:
- 1 egg
- Table spoon of peanut butter (I don't use the one with chunks in it)
- 2 cups of flour
- Baking powder
- 1 cup of butter (unsalted)
- Vanilla extract (or similar)
- Optional: sugar or honey
Mix it all together well, and I mean well, until a pretty greasy dough is formed. You can add a heart, to make it look less like a poo for photos. It smells delicious already.
Leave it to rest in the refrigerator for half an hour and in the meantime preheat the oven to 180c, feed the dog, wash the dishes, play with cars, watch Paw Patrol and before you know it, it's time to go on with our recipe.
Form balls of similar size and spread on baking sheet, like I did in the photo above. The dough is pretty easy to work with, it doesn't stick and there is no mess.
After you formed the balls, press them with a fork in crisscross pattern for that old school cookie look. Or you can be creative and make different impressions with different objects around the house. This can be an interesting project to do with kids too.
Bake in oven for 10 minutes on 180c and no more. They bake fast and don't need any more time or they will become dry and burned easily.
Your little peanut butter, semi sweet, semi salty cookies are done! They are such fun snack to have, with bursts of salt in soft cookies. They melt in your mouth and leave you wanting more, just what I like!
