Arvi is a summer vegetable, readily available in India. It looks a little like potato and can be made in similar fashion. There are lot of ways one can make Arvi, curry version, French fries version and then boiled version too. I always prefer the French fries version since it is crispy and spicy.

Ingredients:
• 500 gms Arvi
• ½ TBSP Red Chilli Powder
• ½ TBSP Turmeric Powder
• Dhaniya Powder
• Salt as per taste
• Amchoor
• Maggie masala
• 1 Sliced Onion
• 2 Chopped tomatoes
• 3-4 chopped garlic cloves
• Chopped Ginger
• Oil for cooking
Step 1: Wash the Arvi well. Peel it and cut in pieces like French fries.
Step 2: Now cut the onion into slices, chop the tomatoes into small pieces and garlic and ginger also into small pieces.
Step 3: Take oil in a pan and heat it. Now add the sliced onion and let them turn brown.Once they are brown, add garlic and ginger. Now add tomatoes and let it cook for 5 minutes.
Step 4: Add all the spices. Mix well and let it cook. Now add the Arvi and mix it well with the onion tomato mixture. Don’t cover the Arvi and let it cook on medium flame. Keep mixing.
Step 5: Once the Arviis properly cooked, empty the pan in a bowl. Serve hot with chapatis/paranthas.
