A great tip to make bread rolls is to use a mixture of milk and water for soaking the bread instead of water only. Milk clogs the pores of the bread and thus doesn’t allow too much oil to enter the bread and keeps the rolls light.

Step 1: Boil potatoes in a closed pan for about 15 minutes. Let them cool.
Step 2: Peel off the potato skin once cold and mash them properly. You can choose to grate them as well for a nice texture.
Step 3: In the mashed potato, add chopped onion, chopped green chillies, coriander leaves and all spices. Mix the mixture well. Grate the cheese and add to the mixture. Mix well.
Step 4: Take the bread slices and cut the sides.
Step 5: In a bowl, mix water and milk.
Step 6: Now dip the bread slice in the water mixture for not more than 5 seconds. Squeeze the bread slice to drain out the water.
Step 7: Now take a small portion of the potato mixture and put it on the bread slice. Roll the bread to make cylindrical rolls. Make sure not to overload the bread slice. It should close properly. Repeat with all the bread slices.
Step 8: Heat the oil in a pan. Fry the rolls on a slow flame for about 5 minutes.
Step 9: Let them cool for around 2 minutes. Sprinkle some chat masala from the top and serve hot with Tomato ketchup/Chutney.
