If you have been to India, you must have definitely noticed small kiosks, on a bicycle, selling something. Ever wonder what is that? It's actually a very tasty dish and trust me, they taste best when eaten from those bicycle kiosks. But usually, people are too hygiene conscious to consume food from such a place. It's also available in Chandni Chowk, a famous foodie's paradise in New Delhi. But again, the same problem.
But that's not that big a problem. I mean we can always try and make them at home and that's what I did today. It's a crispy fried bread made with refined flour and stuffed with white lentils and some indian spices.

Ingredients
For the dough you need:

| 4. | Ghee | 2 TBSP |
For the stuffing you need:

| 4. | Asofetida | 1/4 TBSP |
| 5. | Coriander Powder | 1 TBSP |
| 6. | Red Chilli Powder | 1/2 TBSP |
| 7. | Cooking Oil | 1 TBSP |
Method to prepare the dough
Step 1: In a large bowl, add the refined flour, salt, carom seeds, and ghee. Mix them well.
Step 2: Slowly add water and kneed into a tight dough. Keep it aside for about 30 minutes.
Method to prepare the stuffing
Step 3: Take a pan and dry roast the lentils in the pan. Allow them to cool.
Step 4: Now take them out in a mixer and grind to a fine powder.
Step 5: Take the powder out in a bowl. Add asafoetida powder, fennel seeds, salt, coriander powder, red chili powder, and cooking oil. Mix well.
Step 6: Now add 3-4 TBSP water and mix well to get it a little wet. Make sure it binds just a little.
Method to prepare the breads
Step 7: Take a small portion of the dough and flatten it.
Step 8: Stuff a small spoon of the lentil mixture prepared. Close the dough from all sides and roll it again.
Step 9: Now take a rolling pin and flatten the bread. Make it lean but slowly, the filling should not come out.
Step 10: Heat oil in a deep pan and once it is hot, fry the bread until they turn reddish-brown.
Serve hot with curry potato and mint chutney. Happy Weekend!
