Yesterday was my aunt's birthday and to celebrate the occasion, my mother cooked pancit bihon for dinner. She doesn't have a husband nor a child that's why she doesn't feel the need to hold a celebration for her birthday. But as a little celebration, we had pancit bihon.
Pancit bihon is a popular Filipino noodle food made from thin noodles and cooked with soy sauce, vegetables and meat. It tastes best when poured with some limes. The dish is popular during celebrations like birthday because it signifies and wishes the celebrant long life.
We also added bread and apple for our dinner. I also ate the leftover chicken noodle soup last night.
For my breakfast, I had egg with tomatoes, carrots with cheese, lettuce, cucumber, banana, bread with cheese spread, and fried eggplant. I also had a pear and drank ginger tea before the meal.
I am feeling a lot better now so I think I will be fully-recovered from colds tomorrow. 馃帀
