The purpose of a musical instrument is to make a good sound whilst being practical to play so the musician can get the most from it. They can also be art in themselves. Luthiers (guitar builders) come up with all sorts of designs. They are still mostly made of wood and there are some beautiful woods that will be chosen for looks as well as tone.
Premier Guitar magazine has a series of videos from the Holy Grail Guitar Show in Berlin where makers show off what they have done.
This jazz guitar is by Manzer from Canada. It's fairly rare to see a female luthier. She has also created some bizarre multi-neck guitars.
This 8 string from Red Layer Guitars is very different and seems designed for heavy rock. The inlays on the fretboard are stunning.
Teuffel make something very different. They are more like sculpture. I saw one in a guitar shop recently, but couldn't afford it.
Jersey Girl Guitars are from Japan. They are a variant on resonator guitars.

These guitars are certainly not going to be cheap. I'm assuming many thousands of dollars/pounds/euros. They will require lots of hand-crafting by people who have honed their skills for many years. Some of the materials will be expensive too. Of course you can buy a cheap, mass-produced guitar, but you may have to compromise on what you get. I had a guitar made for me a couple of years ago that doesn't look too fancy, but I was able to get the features I wanted for a reasonable price. I'm sure these luthiers will take requests from customers too as I expect each guitar is built to order.
