Greetings, dear vegan family! We are in the midst of Holy Week 2026, a time for reflection and contemplation, a moment to think and draw closer to God. And today I bring you a simple recipe, based on a grain that is commonly eaten throughout Venezuela, and I'm referring to BLACK-EYES BEANS, a legume that is easy to prepare and, with just a few vegetables and spices, becomes delicious.

¡Saludos querida familia vegana! Estamos en plena Semana Santa 2026, época de reflexión y recogimiento, un momento para pensar y acercarnos a Dios. Y para hoy les traigo una receta sencilla, en base a un grano que suele comerse en toda Venezuela, y me refiero a los FRIJOLITOS BLANCOS DE OJITO NEGRO, una legumbre sencilla de preparar, que con pocas verduras y especias, quedan deliciosas.

I got this package of beans on sale for $1 per kilo, and even though I don't usually cook them often, the price seemed great, so I decided to buy it to cook later. These beans come clean, without any debris or stones, so there was no need to clean them before cooking. With that said, let's get to my recipe.

Este paquete de frijoles que cociné, lo conseguí en oferta, a 1 $ el kilo, y aunque no suelo prepararlos con frecuencia, el precio me pareció genial, así que quise comprarlo para cocinarlos después. Estos granos vienen limpios, sin residuos o piedras, por lo que no fue necesario limpiarlos antes de cocinarlos. Dicho esto, vamos a mi receta.

THE RECIPE / LA RECETA


Time, ingredients and equipment

  • Preparation time: As I've mentioned in posts with similar recipes, Mom taught me that when preparing beans, you have to do it with time, ideally a day or two in advance. In this case, I spent about two days making this recipe. Mom always tells me that the beans need to soften and develop their flavors, as well as thicken the broth, so they become truly delicious. So, we're talking about time and patience.

  • Servings: 1 kilo of black-eyed peas, which is equivalent to several servings (at least 12, depending on the size).

The quantities of ingredients listed below can be varied according to availability and personal preference.

  • 1 kilo of black-eyed beans.

  • 500 grams of white onions.

  • 16 sweet peppers (I use 4 sweet peppers for every 250 grams of beans) + 4 more sweet peppers, which I'll use for the first cooking.

  • 1 large head of garlic.

  • 80 grams of scallions.

  • 100 grams of leeks.

  • 80 ml of annatto oil (vegetable oil with annatto).

  • 1 tablespoon of white vinegar.

  • 1 level tablespoon of sugar.

  • Salt to taste (I used 4 level tablespoons).

  • Spices to taste: I only had ground cumin and bay leaves, so I used 1 tablespoon of ground cumin and 3 large bay leaves.

  • 1 teaspoon of baking soda (to soften the beans and reduce any gas they might produce).

  • Enough clean water to wash, soak, rinse, and cook the beans.

  • Pot, cauldron, knife, cutting board, teaspoon, plate, ladle, blender, strainer, etc.

  • IMPORTANT NOTE: If you want to thicken the broth, you can dissolve a tablespoon of cornstarch in cold water and add this mixture little by little while stirring the beans, while it's on the heat. This is done when adding the sautéed vegetables. Another option is to blend some of the cooked beans with the broth and the sautéed vegetables, which is what I used this time.

Tiempo, ingredientes y equipo

  • Tiempo de preparación: Al igual que he dicho en post con recetas similares, Mamá me enseñó que cuando se preparan granos, hay que hacerlo con tiempo, de ser posible con un día o dos de antelación. En este caso yo invertí dos días (aproximadamente) para hacer esta receta. Mamá siempre me dice que los granos necesitan ablandarse y asentar sus sabores, así como engrosar el caldo para que sean realmente deliciosos. Así que estamos hablando de tiempo y paciencia.

  • Raciones: 1 kilo de frijolitos blancos de ojito negro, que equivale a varias raciones (al menos 12, dependiendo del tamaño).

Las cantidades de ingredientes que a continuación presento, pueden variarse, de acuerdo a la disponibilidad y gusto de cada quien.

  • 1 kilo de frijolitos blancos de pico negro.

  • 500 gramos de cebollas blancas.

  • 16 ajíes dulces (yo uso 4 ajíes por cada 250 gramos de frijoles) + 4 ajíes más, que usaré en la primera cocción.

  • 1 cabeza grande de ajo.

  • 80 gramos de cebollín.

  • 100 gramos de ajo porro.

  • 80 ml de aceite onotado (aceite vegetal con achiote).

  • 1 cucharada de vinagre blanco.

  • 1 cucharada rasa de azúcar.

  • Sal al gusto (yo utilicé 4 cucharadas rasas).

  • Especias al gusto: Sólo tenía comino molido y laurel en hojas, usé una cucharada grande de comino molido y 3 hojas grandes de laurel.

  • 1 cucharadita de bicarbonato de sodio (para ablandar y disminuir los gases que los frijoles puedan producir).

  • Agua limpia suficiente, para lavar, remojar, enjuagar y cocinar los frijoles.
  • Olla, caldero, cuchillo, tabla de picar, cucharilla, plato, cucharón, licuadora, colador, etc.

  • NOTA IMPORTANTE: Si quieren engrosar el caldo de estos granos, pueden diluir una cucharada de fécula de maíz en agua fría, y añadir esta mezcla poco a poco, mientras se revuelven los frijoles, estando en el fuego. Esto se hace al momento de añadir las verduras sofritas. Otra opción es licuar una parte de los frijoles ya cocidos con el caldo junto con los vegetales sofritos, y esta fue la alternativa que usé en esta ocasión.

THE PROCEDURE / EL PROCESO


Soak the beans in plenty of clean water for at least 8 hours; overnight, as I did, is even better. This softens them and removes antinutrients such as lectins and phytates, which make them difficult for humans to digest. After soaking, drain and rinse them several times with plenty of clean water. Then, bring them to a boil over high heat with plenty of water. At this point, I like to add some salt, baking soda (it speeds up the softening process and makes the beans more digestible), as well as a bay leaf, some onion (in this case, 100 grams), 4 sweet peppers, chopped scallions and leeks (half the amounts indicated), and half a head of garlic (chopped). This allows the beans to develop a good flavor from the very first minute of cooking. NOTE: I haven't fully illustrated the process here because I forgot to take pictures of this entire preparation stage.

Poner a remojar los frijolitos en abundante agua limpia por al menos 8 horas, si es de un día para el otro, tal como hice yo, es mucho mejor. Esto permite ablandarlos y eliminar antinutrientes, tales como lectinas y fitatos, que dificultan ser digeridos por el ser humano. Una vez pasado este tiempo, colarlos y enjuagarlos varias veces con abundante agua limpia. Luego llevar a fuego alto, con abundante agua. En este momento a mí me gusta añadirles parte de la sal, el bicarbonato de sodio (acelera el ablandado de los granos y les hace más digeribles, así como el laurel, parte de la cebolla (en este caso 100 gramos), ajíes dulces (4 unidades), trozos de cebollín y ajo porro (la mitad de las cantidades señaladas) y media cabeza de ajo (en trozos). Esto permite que desde el primer minuto de cocción los frijoles adquieran un buen sabor. NOTA: Aquí no ilustro completamente el proceso, ya que realmente olvidé tomar las fotos de esta etapa entera de preparación.

Cook over medium-high heat (covered, stirring occasionally to prevent sticking) until tender. In this case, since I'm not using a pressure cooker, it took three hours. Check the liquid level to ensure they don't dry out; add more water if necessary.

Cocinar a fuego medio alto, (tapados y removiendo eventualmente para evitar que se peguen), por el tiempo necesario para que se ablanden. En este caso, ya que no estoy usando olla exprés, tomó tres horas. Verificar la cantidad de líquido de manera que no se sequen, así que de ser necesario, añadir más agua./div>

Meanwhile, roughly chop the vegetables: scallions, leeks, sweet peppers, garlic and onions. Set aside.

Mientras tanto, picar de modo no tan prolijo, ya que no es necesario, las verduras, es decir, el cebollín, ajo porro, ajíes dulces, ajos y cebollas. Reservar.

Once the beans are soft, place the vegetables in a heavy-bottomed pot or cauldron (in this case, I'm using my great-grandmother's amazing cauldron) and add the annatto oil, a little salt (remember you already added some to the beans), and the sugar. Sauté over high heat (aprox. 5 minutes). Once the vegetables are partially sautéed, add the white vinegar and stir. Continue sautéing for about 5 minutes more, until the vegetables are cooked through. Remove from the heat.

Cuando ya están blandos los frijoles, colocar los vegetales en un caldero u olla de fondo grueso, (en este caso estoy usando el súper caldero de mi bisabuela), y añadirles el aceite onotado, un poco de sal (recuerda que ya has adicionado a los frijoles parte de ésta), el azúcar. Llevar a sofreír a fuego alto (por aproximadamente 5 minutos). Una vez que los vegetales estén medio sofritos, agregar el vinagre blanco y remover. Seguir sofriendo por aproximadamente 5 minutos más, hasta que los vegetales estén bien cocidos. Retirar del fuego.

Add 1 1/2 cups of the cooked beans with their broth to the sautéed vegetables, stir, and transfer to a blender. Blend for about 30 seconds. Add this mixture to the pot of beans, along with the spices (in this case, ground cumin). Stir well. At this point, you can also adjust the salt and spices, and if available, add chopped cilantro. Cook over medium heat for approximately 20 more minutes, or until the beans are very tender and the broth has thickened.

Añadir a los vegetales sofritos, una taza y media de los frijoles ya cocidos con su caldo, remover y llevar al vaso de la licuadora. Licuar por unos 30 segundos. Adicionar esta mezcla a la olla de los frijoles, junto con las especias, (en este caso el comino molido). Remover bien. En este punto también puedes corregir la sal y las especias, y si tienes disponible, puedes añadir cilantro picadito. Cocinar a fuego medio, por aproximadamente 20 minutos más o hasta que los frijoles estén bien blandos y el caldo espeso.

The black-eyed beans are ready. All that's left is to serve and enjoy. Here I served myself a plate with white rice and fried plantain slices, and this was my lunch. These beans are tasty, although not as filling as black beans or whole peas. They are easily digested, but very nutritious, versatile, and useful for making your meals more complete, or for eating on their own.

Ya están listos los frijolitos blancos de ojito negro. Sólo queda servir y disfrutar. Aquí me serví un plato con arroz blanco y tajadas de plátano maduro frito, y este fue mi almuerzo. Estos granos son sabrosos, aunque no tan contundentes como los frijoles negros o las arvejas enteras, son granos que se digieren rápido, pero que son muy nutritivos, versátiles y útiles para hacer más completas tus comidas, o para comerlos solos.
