Blanch the pork ribs in water with a little bit of salt. Then drain.
Blanching is a, culinary technique involving briefly scalding food in boiling water or steam (typically 1–5 minutes) followed by immediate immersion in ice water ("shocking") to stop cooking.
In the meantime, prepare the sauce in a small bowl.
Sauté the ginger, onions, and garlic in a little cooking oil.
Then add the blanched pork ribs.
Fry the ribs for 1 minute.
Add the sauce.
Stir, cover the pan, and cook for 5 minutes.
Add a cup of water to the pan, cover the pan, and cook until ribs are tender, about 20 minutes. Add water if needed.
Then add pepper, anise, bay leaf, potatoes, and jalapeno peppers. Add more water if necessary. Cover.
Skim off extra fat. (I prefer to skim the fat that builds up on top of the sauce!)
Don't forget to taste the sauce. Add salt if needed. The sauce will thicken, and the meat will be tender when it is cooked... like this 👇. We are done!
