A brownie recipe is typically made of butter, white sugar, cocoa powder, vanilla extract, all-purpose flour, baking powder, salt and walnut halves.
Instead of the usual ingredients, I used:
Mash 3 ripe bananas.
Add a cup of Greek yogurt.
Mix well.
Add 1/4 cup + 2 tablespoons Monkfruit Sweetener.
Monk fruit sweetener is a natural, zero-calorie sweetener. It is high in unique antioxidants called mogrosides, which make it 100–250 times sweeter than regular sugar. Source
Grind up 2/3 cup oats.
Then add the ground oats to the bowl.
Mix in 1/2 cup cocoa powder.
1/4 tsp baking powder
I added 1/2 cup cashew nuts because I ran out of walnuts. I ground the cashew nuts.
Lastly, I added dark chocolate chips, then mixed it up.
I used an 8" x 8" pan lined with parchment paper. Then pour the batter into the pan. Bake in the preheated oven at 325 degrees Fahrenheit for 35-40 minutes.
The brownie is done when the top is dry and the edges have started to pull away from the sides of the pan.
