No hay casa en Cumaná que no tenga en el patio o en el frente una mata de mango. Esta fruta es originaria de Asia; llega a Venezuela, desde las Antillas, desde Barbados, Jamaica o Trinidad. Y se quedó en nuestro suelo siendo uno de los cultivos más populares, por la vesatilidad de su fruto.
¡Y ya casi es temporada! Aunque hay quienes dicen que la temporada de mangos en Venezuela es todo el año. Hacer alimentos con cosechas de temporada es beneficioso para la salud. Los ciclos naturales están cronometrados con los ciclos corporales, porque somos parte de la naturaleza. Así que en temporada de mangos, hagamos postres y comidas con esta noble fruta.
En nuestra casa hay una mata de mango en el patio. La sembramos hace más de 20 años, cuando nos mudamos aquí. No son mangos criollos, son mangos injertos, los que le dicen mangas. Tienen un tamaño generoso, son dulces, de pulpa blanda y sedosa. Ayer sábado, pedí a mi hijo Andrés que bajara algunos para hacer el dulce.
He preparado esta receta porque estaba esperando que los mangos estuvieran más formados, listos, entre verdes y maduros, pintones. Además, el domingo es un día tranquilo y en casa nos gusta tener siempre algo dulce en la nevera, ¡así que hoy era el día!.
Esta receta la aprendí de mi abuela materna; pero ella la hacía con los mangos enteros, de la mata de mango que había en su casa, en La Casa Vieja, como todos le decíamos. Hace algunos años, se me ocurrió rayar el mango, a ver cómo quedaba, lo demás es el procedimiento original.
Cada vez que hago esta receta, comparto con mis hermanos y mi papá, también con uno o dos amigas, porque me encanta hacerla, me gusta cómo queda, es rendidora y muy buena en realidad; así que es una forma de compartir el momento con quieres estimas y aprecias.
Esta receta no tiene ingredientes de estricta medida. Yo he utilizado:
11 mangos pintones, más verdes que maduros.
Vainilla.
Clavos de olor.
Canela en polvo.
Azúcar blanca.
Papelón, yo uso el que le dicen panelita.
Pura y exquisita pulpa de mango. Dulce casero con el sabor a tradición.
