To begin preparing our rustic spring pasta with olive oil, the first thing we’ll do is bring a large pot of water to a boil. Just as it starts to boil, add salt and then add the pasta. Cook it according to the package instructions so it comes out al dente. Before draining it, set aside half a cup of the pasta water, as we’ll use it later to finish the dish.
While the pasta is cooking, we’ll move on to sautéing the vegetables. To do this, heat four tablespoons of olive oil in a deep skillet over medium heat, then add the onion, carrot, and red bell pepper. Let them cook together for about 5 minutes, stirring occasionally to caramelize the onion and bring out its sweetness.
After that time has passed, add the broccoli florets and zucchini to the skillet and sauté for about 10 more minutes—just long enough for the vegetables to become tender while retaining their crunch and vibrant colors.
After 10 minutes, make a small space in the center of the skillet, lower the heat slightly, and add the finely chopped garlic along with the thyme and rosemary. Cook for one minute, stirring constantly. At this point, season the vegetables with salt and black pepper to taste.
As soon as the pasta is ready, remove the cup of water—which we’ll add to the skillet later—and strain the pasta. At this point, add the pasta to the skillet, mix everything together thoroughly, and pour in the cup of water. Adjust the salt and pepper to taste, add the remaining two tablespoons of olive oil, toss vigorously, and you’re ready to serve.
So, how did it turn out? Well, as you can see, the result is a very colorful dish, where the thyme and rosemary completely transform a traditional pasta with vegetables into a light, aromatic, and comforting option that proves you can make an incredible meal at home with just a few ingredients—so go ahead and give it a try!
