La idea era preparar opciones variadas para poder escoger lo que nos provoque en el momento, y por supuesto busqué opciones fáciles pero deliciosas, se trata de una gelatina cremosa de fresa con leche y ponqués de limón súper esponjosos. Una combinación perfecta entre lo cítrico y lo dulce que nos fascinó y calificamos con un 10/10.

So today I’m not sharing the recipe for lunch, but for an afternoon snack!
The idea was to prepare a variety of options so we could choose whatever we felt like at the moment, and of course I looked for options that were easy but delicious: creamy strawberry gelatin with milk and super fluffy lemon cupcakes. It’s a perfect combination of citrus and sweetness that we absolutely loved—we give it a 10/10.

Antes de comenzar con el paso a paso de la deliciosa gelatina cremosa de fresa, les quiero contar un pequeño "incidente" que me sucedió mientras la hacía y que les ayudará a no cometer el mismo error. Resulta que algunas marcas de gelatina traen bastante ácido cítrico para resaltar el sabor de la fruta, y al mezclarla directamente con la leche tibia, la acidez cortó la leche por completo dejándola arenosa, y por supuesto cuando vi eso casi me da algo! Pero la IA para todo tiene solución, y aquí se las dejo!
Si les llega a pasar esto, lo que deben hacer es licuar la mezcla de gelatina y leche a máxima velocidad por un minuto para que las cuchillas unan todo de nuevo y nos quede una consistencia lisa y sedosa, pero les tengo un truco mejor: disolver la gelatina en un dedito de agua caliente para "asentar" el ácido, y luego incorporar a la leche tibia, así se ahorran la leche cortada 🫣
En mi caso, hice todo lo contrario, así que calenté la taza y media de leche hasta que estuvo tibia, retiré del fuego, agregué el polvo en forma de lluvia y batí con fuerza por dos minutos enteros y sucedió el desastre que ya les conté, pero que por dicha resolví!
Before we get started with the step-by-step instructions for this delicious creamy strawberry gelatin, I want to tell you about a little “incident” that happened to me while I was making it—one that will help you avoid making the same mistake. It turns out that some brands of gelatin contain quite a bit of citric acid to enhance the fruit’s flavor, and when I mixed it directly with the warm milk, the acidity curdled the milk completely, leaving it grainy—and of course, when I saw that, I almost had a heart attack! But there’s a solution for everything, and here it is!
If this happens to you, what you need to do is blend the gelatin and milk mixture on high speed for one minute so the blades can bring everything back together and give you a smooth, silky consistency. But I have an even better trick for you: dissolve the gelatin in a tiny bit of hot water to “neutralize” the acid, and then stir it into the warm milk.
In my case, I did the exact opposite, so I heated the one and a half cups of milk until it was warm, removed it from the heat, sprinkled in the powder, and whisked vigorously for a full two minutes—and that’s when the disaster I told you about happened, but luckily I managed to fix it!

Para los ponqués de limón lo primero que hacemos es precalentar el horno a 180 °C, para seguidamente, batir muy bien la margarina con el azúcar hasta lograr una crema amarillo claro.
