'Happy Father's Day!'. How lovely a suprise on a Sunday morning, especially since we both forgot it was father's day. The phone had rung early, and the father in question instantly thought - has the son in question's car broken down? He felt a little bit ashamed, because it seemed that no, he was ringing to wish him best returns of the day. And then: 'um.... I'm stuck in town and my clutch seems to be broke?'. Oh dear. Poor kid though - he knew we'd be laughing. Fancy having to ring your Dad on father's day to ask him to fix your car.
And, because of course he was stuck in town getting the car towed and sorting out puppy babysitting when he did so, and finding a car to borrow, guess who made Father's Day lunch? Yep, that's right. Mum.
First was a kind of potatas bravas - or my version of this Spanish dish anyway. It's so simply but totally delicous. Boiled potatoes are fried in liberal amounts of olive oil and smoked paprika, with sprinklings of rosemary, some salt and pepper, and lots and lots of olives. Once you've had potatoes like this you'll want them every night for tea!
For the accompanments, I had to do a bit of an old mother hubbard, as I really didn't have a lot in. We haven't been shopping much as I find it unbearable going to the supermarket with a mask. But, the best meals are often made when you're forced to be creative. So on the left below, it's steamed green beans with a creamy mustard and horseradish dressing, and on the right is a kind of creamy spread or dip made out of roast almonds, cashews, coconut milk, lemon juice, salt and topped with fried garlic shoots and garnished with calendula.
I also happened to pick up some vegan halloumi last week that I forgot I had. It's pretty good! I imagine you could do similiar with tofu. It's simple fried in olive oil with a splash of red wine, and topped with mint.
Eggplant. Just for me and my son's girlfriend - we love it and the boys despise it. Fried and topped with nigella (or kaloonji, or black onion seeds, or whatever you call them - I love them!). Creamy and delicious.
We ate late afternoon, mopping up the tastiness with some delicious afghan bread I'd found in the freezer (feeling grateful for bulk buying, that's for sure) and a few beers.
