Made lamb pilau for my wife today.
Special recipes past down by my wife’s nan.
We used the following to make a stock first boiled for 15 mins.
Cut up onions (oblivious) into 4 big pieces with some garlic slices , cumin seeds, Black cardamom,full black pepper, bay leaf, table spoon of salt.
Once boiled for 15 mins , and half kg boneless lamb then boil for 45 mins stir every 5-7 mins.
Prepare to make the rice.
Fry onions with ginger garlic till it goes golden colour add cumin powder 1tbsp garam masala 1 tbsp salt 1 tbsp mix well, add the meat pieces into the onions and masala and cook for 10 mins and then add the rice along with the stock and cook on high heat for atleast 10 mins and then cook on low heat for 10-15mins.
Then I made a little starter called Chana chaat.
Cut up half onion
Cut up half cucumber
Cut up 1 large tomato
Cut up 1 green chillie
Boiled diced potatoes
Chickpeas
Salt 1tbsp
Tamarind sauce
And then I added Chana chaat masala along with 1 natural plain yogurt and then mix it all together and best served chilled.
That’s without the yogurt.

Have the Chana chaat first as a starter the chilli hits you then you have the lamb pilau which goes down nicely, or do what I do and mix it together and eat it .
My wife loved it so I’m happy.
