Another fish is the star of this recipe. This time, cojinoa arrived at my table. In other places, it is called cojinua, and it is perhaps one of the most popular fish in the city of Cuman谩 due to its distinctive flavor and versatility.
This fish has high nutritional value, which is why it is one of the favorites of the people of Santa Cruz. It can be used in different recipes as it goes very well with other ingredients. In this case, I decided to fry it to serve it crispy and as side dishes I chose rice, salad, and plantains, a perfect combination for lunch.
Ingredients:
- 3 cojinoas
- Oil and salt
For the rice:
- Onion
- 5 chili peppers
- 1 bell pepper
- 1 cup of rice
- 3 cups of water
- Salt to taste
For the salad:
- 1 large carrot
- 2 beets
- 1 onion
Procedure:
I left the task of preparing the fish to my husband, who took care of the "dirty" work 馃槄. After removing the guts and gills, I cleaned them and sprinkled them with salt. Then I preheated a frying pan and added oil. When it was at the ideal temperature, I proceeded to fry the fish.
At the same time, I started cooking the rice. I chopped the seasonings and put three cups of water and a pinch of salt in a pot. When it boiled, I added the cup of rice along with the chopped seasonings and lowered the heat a little.
I also grated the carrots and beets for my salad and placed them in a container. Meanwhile, I chopped the onions into circles. I combined the ingredients, added two tablespoons of mayonnaise, and a pinch of salt.
Finally, I fried a plantain, and when everything was ready, I served it on a flat plate. The meal was delicious, and my husband and I were pleased with the result.
The fish was crispy and fresh, the rice was cooked to perfection, the seasonings added a lot of flavor, and the salad was a sweet respite that went very well with the meal.

Otro pescado es el protagonista de esta receta, en esta ocasi贸n lleg贸 a mi mesa la cojinoa, en otras partes se le llama cojin煤a, quiz谩s uno de los m谩s populares en la ciudad de Cuman谩 debido a su distintivo sabor y versatilidad.
Este pez tiene un alto valor nutricional, de all铆 que sea uno de preferidos de los sucrenses. Con 茅l se pueden realizar diferentes recetas ya que se integra muy bien con otros ingredientes. En este caso decid铆 fre铆rlo para servirlo crujiente y como contornos seleccion茅 arroz, ensalada y pl谩tano, una combinaci贸n perfecta para el almuerzo.
Ingredientes:

Para el arroz:
- Cebolla

- 1 piment贸n
- 1 taza de arroz
- 3 tazas de agua
- Sal al gusto
Para la ensalada:
- 1 zanahoria grande
- 2 remolachas
- 1 cebolla
Procedimiento:
La parte de componer los pescados se la dej茅 a mi esposo, quien se encarg贸 del trabajo "sucio" 馃槄. Despu茅s de extraer las v铆sceras y las agallas, los limpi茅 y les coloqu茅 un punto de sal. Luego precalent茅 un sart茅n y a帽ad铆 aceite. Cuando estuvo a temperatura ideal proced铆 a freir los pescados.
En forma paralela inici茅 la cocci贸n del arroz. Cort茅 los ali帽os y en una olla coloqu茅 las tres tazas de agua con una pizca de sal, al hervir agregu茅 la taza de arroz junto a los ali帽os picados y baj茅 un poco la intensidad de la hornilla.
Igualmente rall茅 la zanahoria y las remolachas para mi ensalada, las coloqu茅 en un envase. En tanto, las cebollas las piqu茅 de forma circular. Un铆 los ingredientes, le coloqu茅 dos cucharadas de mayonesa y una pizca de sal.
Finalmente, fre铆 un pl谩tano, cuando todo estuvo listo serv铆 en un plato llano. La comida qued贸 deliciosa, mi esposo y yo quedamos complacidos con el resultado.
El pescado estuvo crujiente y fresco, el arroz en su punto, los ali帽os le aportaron bastante sabor, y la ensalada fue un respiro dulce que se integr贸 muy bien.
