So, today I'm going to make salad pasta which is the perfect summer menu. It's been so hot in here HCMC, the temperature is between 36 to 40 degrees every day. So in this kind of weather, I want to have something fresh and clean and also cold dishes.
I don't really like just having salad for a meal.. because it doesn't make me feel full at all, and I end up eating more later. However, this salad pasta is different with just salad, it has pasta noodles in it so it can be pretty filling.
I got inspired by this recipe from the famous restaurant called Mies Container in Gangnam, Seoul. They have really nice and unique atmosphere and Salad Pasta is one of the best menus in there. I highly recommend this restaurant if you have a plan for visiting Seoul, South Korea.
It's okay if you don't have any plan to visit Korea because you can just follow my recipe! :D Okay, let's get started!

Servings:
• 1 cup salad lettuce (shred into large chunks)
• 1/4 cup cherry tomatoes (cut in half)
• 1/6 cup bell pepper (thinly sliced)
• 1/6 onion (thinly sliced)
• 1/6 corn
• 1/6 apple (thinly sliced)
• 50g spaghettini
• 2 Tbsp balsamic vinegar
• 1 Tbsp sweet chili sauce
• 1 Tbsp ketchup
• 1 Tbsp soy sauce
• 1/2 Tbsp dijon mustard
• A pinch of salt & black pepper
1. If you prepared all the fresh ingredients and made the dressing in advance, let's start to cook spaghettini. You can use another kind of pasta noodles, but I found for this recipe thinner noodles are suits better. Add 1 Tbsp of salt to 1L of water, and when it starts to boil, add spaghetti and boil over medium heat for 5 minutes.

When the spaghetti is cooked, drain the hot water and rinse it several times with cold water.
3. Put the noodles in a medium-size bowl, add 2 Tbsp of dressing and mix together.
4. On top of the noodle, put lettuce and other salad ingredients.
5. Sprinkle dressing on top of the salad, and serve!
