Ingredients for Achaari Chicken Tikka
Boneless chicken cut into 1 inch pieces 400 grams
Lemon juice 1 tablespoon
Salt to taste
Ginger-garlic glue 1 tablespoon
Red stew powder 2 teaspoons
Spread 2 tablespoons
Gram flour (besan) 1 tablespoon
Hung yogurt 1 container
Mustard oil 2 tablespoons
Oil for shallow searing
Chaat masala to sprinkle
New mint sprigs for embellishing
Onion rings to serve
Lemon wedges to serve
Flavor blend
Mustard seeds 1 teaspoon
Fennel seeds (saunf) 1 teaspoon
Onion seeds (kalonji) 1 teaspoon
Fenugreek seeds (methi dana) ½ teaspoon
Dark salt (kala namak) ½ teaspoon
Method
Dry the chicken in the wake of washing and keep aside.
For setting up the achari masala, broil the Coriander seeds , Mustard seeds , Fennel seeds , Cumin seeds, Fenugreek seeds , Carom seeds , Kalonji , red chilies till it is marginally darker in low fire.
Once done include some Dry mango powder/amchur into it. Powder it in a blender processor coarsely (don't make it into a fine powder). Achari powder is prepared
In a vessel blend the Achari powder, curd, Garam Masala, lemon Juice, Ginger glue, garlic glue and all the rest of the fixings to make into a pleasant glue. Include additional yogurt/curd if vital for the best possible consistency of the glue.
Include nippy powder and mustard oil into it and blend legitimately.
Include chicken pieces into it and coat them appropriately to marinate and keep aside for next 2 hours.
Utilizing Oven :
