Its Monson time and its raining in Bengaluru from last 3 days and while its raining we all crave for hot Puris , bhajia and pakodis with hot pipping tea or coffee. Isn't it?
So, in this raining day I decided to make BEDMI PURI AND ALOO KI SABZI. Puris is eaten all over India. Actually a combination of puri and aloo ki sabzi is served as a combo meal and they are super delicious. But if you want to serve any other gravy based curry then you can depending upon the regions. But the real taste will come in the potato curry only and this combination is known as Bedmi aloo recipe.
In North side like Delhi and Uttar Pradesh. It is an great option in breakfast. Peoples love this Bedmi puri and aloo ki sabzi. Bedmi puri is Lentil stuffed puri. It is served with spicy masala potato gravy based curry.
So lets see how to make this quick and delicious recipe-.
INGREDIENTS
โช๏ธurad dal-1cup
โช๏ธmoong dal-ยฝcup
โช๏ธginger-1 inch
โช๏ธgreen chili-2
โช๏ธred chili powder-ยฝtbspn
โช๏ธsalt-to the taste
โช๏ธwater-as needed
โช๏ธwheat flour-2 cup
โช๏ธsemolina-ยฝcup
โช๏ธcarrom seeds-ยฝtspn
โช๏ธnigella seeds-ยฝ tspn
โช๏ธbay leaf-1
โช๏ธturmeric powder-ยฝtspn
โช๏ธgaram masala-ยฝtspn
โช๏ธkasuri Meethi-ยฝ tspn
โช๏ธtomato-2 cup
โช๏ธonion-2
โช๏ธgarlic-5
โช๏ธoil-for frying
โช๏ธoil for curry -3 tbspn
โช๏ธboiled potato-2 cup
METHOD
1.in a bowl take urad dal.
2.secondly, take moong dal.
2.then mix it.
3.wash the dals properly in running water for 3 to 4 times. and then soak it in enough water for 6 to 8 hours.
4.after soaking drain the water.
5.now in a grinder take green chilies, ginger and soaked dal.
6.grind them and make a coarse paste. Make sure not to nake too thin and too thick paste.
7.Take out in a bowl and add salt, turmeric and red chili powder.
8.now take wheat flour and semolina in a bowl.
9.mix the lentil paste and carrom seeds. Mix them with the fingertips and combine all the ingredients.
10.now add water gradually as required and knead in a smooth and stiff dough.
11.Keep kneading for 5 mins and cover the dough for 20 mins and keep aside.
For Aloo ki Sabzi-
1.now take fresh tomatoes.
2.in a grinder take chopped tomatoes, ginger and greenchilies.
3.then add garlic pods.
4.and add onions slices.
5.grind it in a paste.
6.heat oil in a pan.
7.add nigella seeds, cumin seeds, bay leaf and asofedita.
8.now add the tomato onion paste.
9.add turmeric powder, redchili powder and coriander powder.
10.then add salt. Cover and Cook for 10 mins in low flame.
11.boil the potatoes.
12.add the boiled and chopped potatoes.
13.mix it.
14.cook for 10 min on low flame.
15.when the oil releases then add kasuri Meethi and garam masala.
16.mix it and off the flame and keep aside.
Now for Bedmi Puri
1.After 20 mins knead the dough again and Divide the dough into equall portions.
2.flatten the balls.
3.with the help of rolling pin roll it out evenly.
Roll out nicely and make sure they are not too thin in the centre.
4.In a wok heat oil for deep frying the pooris.
5.fry the pooris gently pressing down with the frying spatula in a circular motion.
6.flip the sides and fry until it turns golden brown. The puris will puff up.
7.likewise fry the rest Puris. And drain out the puris in a plate.
8.now serve these steaming hot Puffy, crispy and yummy puris with aloo ki sabzi.
