Thanksgiving and Christmas are right around the corner. Our family has a tradition of deep frying turkeys for the holidays.
It is so good and juicy, the best turkey I've ever had!

I like to buy an injection kit and shoot the birds full of creole butter and cajun seasonings! I also cover the outside with cajun seasonings which I make using:
salt, oregano, paprika, cayenne pepper, and black pepper

The cooking method is easy but you have to be careful and not burn the deck or porch down with hot grease! We usually opt for the dirt yard. Put the turkey in the pot and add water until the whole thing is submerged about two inches under the surface. Remove the turkey and make a mark on the inside of the pot right at the water level. This is your mark for adding your peanut oil to do the frying. Now dump the water, dry the turkey and add your seasonings.

Fire up the gas burner and heat the oil to 350 degrees. Add the dry, seasoned bird and after the temperature reaches 350 again, fry it for 4 minutes per pound. Example, a 10 pound bird would cook for 40 minutes.

We cook under a tree and rig up a simple pulley with a rope and it works like a charm!

Raise the bird up when it's done and let the oil drain for aminute.


Prepare for some delicious and juicy, absolutely mouth-watering turkey!
