Make this awesome sushi cake and surprise your friends. Very easy to make and it's perfect for a brunch, baby shower, kids parties, or just because you are craving it.
INGREDIENTS
3 cups of rinsed and drained short grain rice (I used Originario rice)
1/3 cup of rice vinegar
2 avocados
700gr of surimi
2 tablespoons of Mayonnaise
800 gr cream cheese
1/2 teaspoon of shichimi togarashi - optional
1 1/2 cups of deseeded and shredded cucumber
1 1/2 cups of shredded carrots
Furikake of your choosing (dry Japanese seasoning for rice) - optional
Sesame seeds for decoration - optional
DIRECTIONS
Once rice is cooked fluff it and let it cool.
Unroll the surimis and layer them on top of each other.
Line the bottom of a detachable cake pan with parchment paper.
Add a thin layer of cooked rice. (if the rice is too sticky to handle wet the plastic spoon or your hands to press the rice down)
To unmold run a thin knife around the edges of the cake, flip the cake on desired plate and unlatch the sides.
Carefully take the bottom of the cake pan off and delicately remove the parchment paper off.
Decorate as desired.
