Sean bienvenidos a mi blog y especialmente a mi columna Sabor & Nutrici贸n Azul.

"What we eat is what makes us who we are."
This is a thought of my own that I have adopted as a banner after learning and understanding the connection between food, health, behavior and intelligence, thanks to my first son with an initial diagnosis of mild autism and reaffirmed with my second son with the same diagnosis.
Hello to all who read me. Welcome to my blog and especially to my Taste & Blue Nutrition column. Well, this is the second edition, as I must admit that I have been late with this space but I hope it will not happen anymore as the idea is that it will be presented on a monthly basis. In fact, this edition should have been published last night but my time was a little complicated because yesterday, October 30, Alan, my youngest son, had a consultation with the glaucoma specialist and I will present you a publication to tell you about it.
For now, let's talk a little bit about feeding our children and adults with autism because we always talk more frequently about children with autism spectrum and their needs but very little, if ever, about adults. This is because the idea is that the diagnosis of autism is made at an early age and that is the most convenient because this way the case is attended in a timely manner, obtaining progress and better results, that is, a better prognosis for that autistic child and here I take the opportunity to say that food has a crucial role in the treatment in all cases of autism.
If you have a child or other family member with a diagnosis of ASD, in any of the grades, mild, moderate and severe, you should know that you should eliminate foods containing wheat, oats and anything containing gluten which is a protein found in some cereals. In addition, you should eliminate cow's milk or milk from any livestock and all its derivatives such as butter, cheese, whey and anything that may contain casein, a protein in milk of animal origin. Without forgetting, preservatives and artificial colorings that should also be avoided, this can be the most difficult because many times we buy products that say on the label 100% natural but if they are industrially processed they are no longer natural.
It sounds exaggerated, very rigorous and annoying, because there are many recommendations but the fulfillment of them depends on the autistic child's life promising a better adult life even with autism, because ASD will not disappear but it will improve. We only have to take care of their feeding, while we take them to the different therapeutic sessions because everything must be done hand in hand with the feeding, because the autistic's organism, both children and adults, reacts negatively to forbidden foods because they do not absorb them well and this has a negative influence on their nervous system, besides their inflamed digestive system also suffers.
Eating habits are vital for the improvement or worsening of the characteristics of ASD, so according to the compliance of the so-called gluten and casein free diet, in addition free of preservatives and artificial coloring, will depend on the decrease of autistic behavior to the point of being able to play with the special diet.
Yes. With my children I have put the diet into practice since the beginning of my knowledge of their life with autism and the constancy has allowed the disappearance of some autistic characteristics to a level that allows me and them to play with their diet. With my oldest son, who is now 25 years old, I was able to learn about this possibility when he was 7 years old. His teacher at CAIPA Aragua told me that his improvement was such that they could not find a classroom to place him in, since he no longer had disruptive behaviors and she told me that her case was amazing because my son had been in the institution since he was 2 years old and they had seen his evolution with success.
It is very gratifying to hear them tell me that I wish all families understood the importance of the special diet and that by evaluating the child's case, his diagnosis of mild autism was now atypical autism because few autistic characteristics could be seen in my son. The teacher told me that I could play with the diet, that I should give him forbidden foods and that if I saw any alteration in his behavior I should avoid them, but that it would not have to be such a strict diet.
I will never forget each of the teacher's words, nor her name, her name is Aniuska. Today my eldest son, is an excellent example for CAIPA Aragua and is who has driven me in the attentions to my youngest son, to believe firmly in the diet and I extend my words to all of you, especially to @crismat, to

@maxipiano78, to everyone who reads me, to believe that the diet does work but we must really believe it and we must have a lot of constancy.
For all that said, we can throw canitas al aire from time to time with food as you can see in my previous post.
