This year I decided to follow the example of some of my friends and to buy the wine in bulk and bottle it myself. Not only because in this way I can choose what my wife and me like best, but also because, they assured me that you end up spending less. Buying bulk wine compared to bottled wine can lead to significant savings, just think that bulk wine can cost up to 70% less compared to the same purchased in a shop or even in a wine shop.
The savings are greater if you buy the wine in demijohn directly in the cellar and less if you have bag-in-boxes delivered to your home by purchasing them outside the region or in a winery. Here are some tips for those who want to try their hand at bottling!
▣ The right month
September / October and March are the best times. If you like a more mature wine, which can be left in the bottle for up to a couple of years, you have to bottle it now. If, on the other hand, you prefer it young, to be consumed within the year, then do it in March.
▣ The most suitable bottles
Needless to say, they must be made of glass ... the lighter Bordeaux ones are suitable for whites and reds, the Emilian ones, more resistant, are suitable for sparkling wines such as Lambrusco. The color? Generally for red wines brown or green bottles are chosen, for whites and rosés bottles
green or white. But you can use a dark color for whites too if you have no way to protect them from light.
▣ Wash and dry
If they are not new, wash them with hot water and, in case of encrustations, use the special brush. Avoid detergents that could give the wine strange smells and tastes. Then let them dry by holding them upside down, there are also convenient bottle racks to keep them upside down.
▣ It's time to bottle!
The wine should be decanted from the demijohn as soon as possible, and in any case within 20 days of purchase. For those subject to refermentation, which can become very lively like bonarda, it is best to do so within two or three days of purchase. Before starting to bottle, let some wine pass through the bottles in order to wet the inner wall (this wine can be passed from one bottle to another). At this point, place the demijohn on a higher level than that of the bottles and start working with the cannula from the side. The demijohn should be emptied to prevent the remaining wine from losing quality. If, on the other hand, you use the bag in box, you can interrupt the transfer and you do not have to use the cannula because the bag has a tap. Do not fill the bottles to the brim, leave a couple of centimeters free, in the heat the wine increases in volume.
▣ The caps
Crown, synthetic or cork: everyone needs a capping machine. And it seals the bottles immediately to prevent contact with the air from altering their quality. After bottling it is better if you wait a couple of days before consuming it.
▣ Where to store it?
Cool, better in a place with little or no light. Horizontally or vertically? Not being wines for aging it is the same thing.
Do you like wine?
I don't drink much, because I believe that, as in everything, excess is a defect; However, I like to enjoy a good glass of red in the company of my wife during aperitif time or perhaps on special occasions, such as some romantic dinner.
Quest'anno ho deciso di seguire l'esempio di alcuni miei amici e di comprare il vino sfuso ed imbottigliarmelo da solo. Non solo perchè in questo modo posso scegliere quello che più piace a mia moglie e me, ma anche perchè, mi hanno assicurato che si finisce con lo spender meno. Acquistare del vino sfuso rispetto a quello in bottiglia può portare ad un significativo risparmio, basti pensare che quello sfuso può arrivare a costare anche il 70% di meno rispetto allo stesso acquistato in negozio o magari in enoteca.
Il risparmio è maggiore se si acquista il vino in damigiana direttamente in cantina e minore se si fanno arrivare a casa dei bag in box acquistandoli fuori regione o in una vineria. Ecco ora alcuni consigli per chi vuole cimentarsi nell'imbottigliamento!
▣ Le bottiglie più adatte
Inutile dire che devono essere di vetro... le bordolesi, più leggere, sono adatte ai bianchi ed ai rossi, le emiliane, più resistenti, sono adatte ai vini mossi come il lambrusco. Il colore? In genere per i vini rossi si scelgono bottiglie marroni o verdi, per i bianchi ed i rosati bottiglie
verdi o bianche. Ma puoi usare un colore scuro anche per i bianchi se non hai modo di proteggerli dalla luce.
▣ Lavate e asciugate
Se non sono nuove, lavale con acqua calda e, in caso di incrostazioni, usa lo spazzolino apposito. Evita i detergenti che potrebbero trasmettere al vino odori e gusti strani. Poi falle asciugare tenendole capovolte, esistono anche dei comodi scolabottiglie per tenerle a testa in giù.
▣ E' ora di imbottigliare!
Il vino va travasato dalla damigiana il prima possibile, e comunque entro 20 giorni dall'acquisto. Per quelli soggetti a rifermentazione, che possono diventare molto vivaci come la bonarda, è meglio farlo entro due o tre giorni dall'acquisto. Prima di iniziare ad imbottigliare fai passare un pò di vino nelle bottiglie in modo da bagnarne la parete interna (questo vino può essere passato da una bottiglia all'altra). A questo punto posiziona la damigiana su un piano più alto rispetto a quello delle bottiglie e inizia il lavoro con la cannula da traverso. La damigiana va svuotata, per evitare che il vino rimasto perda di qualità. Se invece usi il bag in box, puoi interrompere il travaso e non devi usare la cannula perchè la sacca ha un rubinetto. Non riempire le bottiglie fino all'orlo, lascia un paio di centimetri liberi, al caldo il vino aumenta di volume.
▣ I tappi
A corona, sintetici o in sughero: tutti hanno bisogno di una macchina tappatrice. E sigilla subito le bottiglie per evitare che il contatto con l'aria ne alteri la qualità. Terminato l'imbottigliamento è meglio se aspetti un paio di giorni prima di consumarlo.
▣ Dove conservarlo?
Al fresco, meglio in un luogo con poca o senza luce. In orizzontale o in verticale? Non essendo vini da invecchiamento è la stessa cosa.
A Te piace il vino? Io non ne bevo molto, perchè credo che, come in ogni cosa, l'eccesso è difetto; mi piace però gustare un buon calice di rosso in compagnia di mia moglie durante l'ora dell'aperitivo o magari nelle occasioni particolari, come qualche cena romantica.
