Tanda #6 of Quesillos
@hive-delight: The Process Continues
Today, after quite a long wait, we began the production of our 6th batch of quesillos @hive-delight. And as is our custom, we are pleased to share with you part of what the preparation process is like. To be honest, each batch feels like a small celebration, because it means we keep moving forward.
To begin, we make sure to prepare a good "black caramel," which is obtained by letting refined sugar heat until it takes on a crystalline brown color. Then we let it rest to later add it to the container where our packaged quesillo will go.
Next, we take half a carton of eggs — 15 units — and crack 8 of them to do the first part, and then the second part, since our blender doesn't have that much capacity. We place 8 eggs inside the blender and at the same time add the first carton of condensed milk. With the help of a spatula, we scrape it all in, leaving the carton totally empty, just like in the demonstration.
We repeat the process a second time with the remaining amount of eggs, and to the blended mixture we add a tablespoon of vanilla. The caramel we set aside to rest is added with a spoon — one measure to each container, as we show you in the example. And to finish, we fill each plastic container with the same amount of liquid mixture.
Finally, we heat water in a small pot and pour that water around the metallic baking pan, making sure to keep the cloth damp so that we get the result, replicating the bain-marie technique. Quite beautiful, to be honest — there is something almost therapeutic about the whole process, from cracking the eggs to watching the containers fill up one by one.
Each step requires patience and attention, but the result is always worth it. And knowing that someone will enjoy each quesillo makes every minute in the kitchen meaningful. Stay tuned for the next update, where I will show you the final result of this sixth batch. Thank you very much for reading my publication.
