This refreshing pudding will make you eager to serve it as dessert after a hearty meal today. Its attractive color is surprising—I never would have guessed this pudding was made from my favorite fresh fruit.

Watermelon Coconut Milk Pudding

When mixed with coconut milk, the bright red watermelon transforms into this beautiful shade. The color is so soft when served; it looks luxurious and absolutely adorable. It’s different from the watermelon dessert I made before, which was vegan-based. This time, the watermelon is mixed into a single batter, so if you weren’t told, you’d definitely be fooled. Even my husband was confused trying to guess what this pudding was—he never would have guessed it was a watermelon dessert because the color turned out so beautiful.

The color turns peach—the color change is absolutely stunning, especially when served in a mold with a pretty pattern. Curious about the preparation process? Let’s take a look below.

Ingredients

200 grams watermelon
1 packet jelly
1 tablespoon cornstarch
2 tablespoons sweetened condensed milk
400 ml mineral water
2 tablespoons granulated sugar (adjust to taste)

Making Procedure

Cut the watermelon into small pieces so it’s easier to blend, then add them to the blender along with the water.

I’m so happy—the pudding looked absolutely beautiful after I took it out of the mold, and not a single part was damaged. The pudding set perfectly; when I gave it a gentle shake, the texture was just right. Here’s a tip for you: when making pudding or jelly, make sure to rinse the mold with water before pouring in the pudding mixture. I guarantee your pudding or jelly will come out easily.

The pudding’s texture is very soft, so when serving, I added thick sweetened condensed milk to give it a sweet, fresh flavor. For those of you who don’t like things too sweet, you can enjoy it with any kind of milk—I guarantee the result will be even more delicious. It’s chewy, soft, and cold right after taking it out of the fridge—it’s truly refreshing. It doesn’t taste like watermelon at all; instead, it’s like enjoying a cucumber pudding. I highly recommend you try making this pudding at home.
