Amigos, tras esta receta de Jalea de Níspero del Japón que les voy a enseñar a preparar, hay una anécdota algo graciosa. Estoy residenciada en Buenos Aires. Cada día, según indicaciones médicas, debo caminar al menos seis cuadras para mantenerme si no en forma, por lo menos de pie. A ello se suman los achaques…

Pues bien, durante esas caminatas, en algunas veredas cerca de casa, hay sembradas varias matas de Níspero del Japón, así lo llamamos en Venezuela y en otras partes del mundo. Sus características, si desean conocerlas, aparecen en un post que escribí por cierto, hace un año y desde mi país.

En mi diario caminar, descubrí al Níspero por las características de sus hojas. La estuve observando a la espera de sus frutos, mejor dicho, ¡Al acecho!. Cuando por fin salieron los jugosos nísperos, todos los días pasaba agarrando discretamente un gajito...

Friends, behind this Japanese Medlar Jelly recipe that I am going to teach you how to prepare, there is a funny anecdote. I live in Buenos Aires. Every day, according to medical indications, I must walk at least six blocks to keep myself, if not fit, at least on my feet. On top of that, there are the aches and pains....

Well, during those walks, in some sidewalks near my house, there are several Japanese medlar trees, as we call it in Venezuela and in other parts of the world. Its characteristics, if you want to know them, appear in a post I wrote a year ago, by the way, and from my country.

In my daily walk, I discovered the loquat by the characteristics of its leaves. I was watching it waiting for its fruits, or rather, I was on the lookout! When the juicy loquats finally came out, every day I discreetly grabbed a small slice...



Una tarde paseamos por otra acera para cambiar la rutina y descubrí un "níspero", dentro de una casa que tenía una gran valla eléctrica. Me emocioné cuando volvimos a pasar junto a él y vi que el árbol se doblaba bajo el peso de tantos frutos. Me paré a pensar en cómo podría conseguir algunos de ellos...

El día de ayer, con “mucha timidez”, le toqué la puerta al dueño de la mata. Me atendió una señora. Después de pedirle que me vendiera unos gajos del tan preciado fruto, me respondió muy amablemente que esperara un momento. Mi sorpresa fue tal, que cuando regresó la señora, me ha entregado una bolsa con aproximadamente tres kilos de nísperos, y lo mejor... ¡Me los ha regalado! Me embargaba la emoción. Iba a casa más contenta que "tortuga con rueditas" (Con el debido respeto a las tortuguitas).

One afternoon we walked along another sidewalk to change the routine and I discovered a "loquat tree," inside a house that had a large electric fence. I was thrilled when we passed by it again, and I saw that the tree was bending under the weight of so many fruits. I stopped to think about how I could get some of those...

Yesterday, with "a lot of shyness", I knocked on the door of the owner of the bush. A lady answered me. After asking her to sell me some segments of the precious fruit, she kindly asked me to wait a moment. My surprise was such that when the lady returned, she handed me a bag with about three kilos of loquats, and the best part? She gave them to me as a gift! I was overwhelmed with emotion. I was going home happier than a "turtle on wheels". (With all due respect to the little turtles).

Iba apuradita a lavarlos, para sentarme a comer como debe ser. Ese sabor, entre ácido y dulce en mi paladar, fue embriagante. Me comentan que el lugareño no lo conoce como un fruto comestible, o no lo ha probado aún. Tal vez algún ave, vecino de otro país, o paisano, se trajo al “descuido” una semillita y por allí comenzó su multiplicación. En fin, Comí hasta saciar mi antojo, pero eran demasiados y no los iba a dejar perder.

Lo más gracioso de todo esto ha sido, que cuando en agradecimiento le llevé un frasco con jalea a la vecina, me regaló otra gran bolsa llena de frutos. Así fue como me inspiré para preparar esta jalea de “Níspero del Japón”.

Seguidamente, en vista de que son solo 4, les coloco en imagen la lista con los ingredientes.

I was in a hurry to wash them, to sit down to eat as it should be. That flavor, between acid and sweet on my palate, was intoxicating. I am told that the locals do not know it as an edible fruit, or have not tried it yet. Perhaps a bird, a neighbor from another country, or a fellow countryman, brought a seed "carelessly" and that is where its multiplication began. Anyway, I ate until my craving was satisfied, but there were too many and I was not going to let them go to waste.

The funniest thing about all this was that when I took a jar of jalea to my neighbor to thank her, she gave me another big bag full of fruits. That's how I was inspired to prepare this "Japanese medlar" jelly. Next, since there are only 4 of them, I will show you the list of ingredients in the image.

En cuanto a la preparación, paso a comentarles que para comenzar, los frutos fueron bien lavados, frecuentemente utilizo unas gotas de vinagre mezcladas con agua, (Suelo hacerlo con todos los vegetales y frutos crudos). Una vez lavados, les saqué las semillas. (Entre dos y tres por fruta). Los puse a escurrir en un colador de esos que se usan para la pasta. Ahora el paso a paso.

  • Licuar sin agua, hasta conseguir extraer todo el líquido que contienen estas frutas.
  • Vaciar todo el contenido en una olla
  • Agregar las dos tazas de azúcar, y mezclar
  • Añadir las dos ramas de canela
  • Se preguntarán qué tiene que ver una manzana para hacer un dulce de nísperos... Resulta que cuando queremos preparar una Jalea y que nos quede casi transparente, es necesario añadir Pectina. Es una sustancia que se encuentra en el jugo del limón y en la manzana, sobre todo en el corazón, donde están las semillas. Prefiero colocar manzana, porque no le cambia el sabor a mis dulces. (Eso lo dejo a elección del cocinero)
  • Una vez mezclados todos los ingredientes con la pulpa de níspero licuada, se enciende la hornilla a fuego lento hasta que comienza a hervir.
  • Con una cuchara de madera, (Esto con la finalidad de que no se pierda calor) se comienza a batir suavemente, durante media hora o hasta 45 minutos.

As for the preparation, I will tell you that to begin with, the fruits were well washed, I often use a few drops of vinegar mixed with water, (I usually do it with all raw vegetables and fruits). Once washed, I removed the seeds (between two and three per fruit). I put them to drain in a colander of those that are used for pasta. Now the step by step.

  • Liquidize without water, until all the liquid contained in these fruits is extracted.
  • Pour all the contents into a pot.
  • Add the two cups of sugar, and mix.
  • Add the two cinnamon sticks
  • You may wonder what an apple has to do to make a loquat candy... It turns out that when we want to prepare a Jelly and we want it to be almost transparent, it is necessary to add Pectin. It is a substance found in lemon juice and in apples, especially in the core, where the seeds are. I prefer to add apple, because it does not change the flavor of my sweets (I leave it to the cook's choice).
  • Once all the ingredients are mixed with the liquefied loquat pulp, turn the stove on low heat until it starts to boil.
  • With a wooden spoon (so as not to lose heat), begin to whisk gently for half an hour or up to 45 minutes.

  • Luego de intervalos de tiempo mezclando, se va chequeando de manera que al mover la mezcla se formen caminos o burbujas de color transparente.

  • Apagar y colocar un poco de jalea caliente en un plato, pasar una cucharilla en el centro y si no se unen ambos, significa que ya estuvo lista la Jalea o en el punto correcto de cocción. (Ilustración en la siguiente imagen)

  • Mientras se cocina la jalea, ir esterilizando los envases de vidrio con tapa de metal, para la conserva. Esto se hace en el momento de sacarla de la olla, aún caliente.

  • Poner a enfriar el que será para el consumo inmediato. En mi caso, la serví con galletas saladas.

After mixing for some intervals of time, it is verified that when moving the mixture, paths or bubbles of transparent color are formed.

Turn it off and place some hot jalea on a plate, pass a teaspoon in the center and if both do not join, it means that it is ready or at the right cooking point (Illustration in the following picture).

While the jelly is cooking, sterilize the glass containers with metal lids for preserves. This is done at the moment of taking it out of the pot, still hot.

Put the one that will be for immediate consumption to cool. In my case, I served it with cookies.

La Jalea de Níspero del Japón ya está Lista

Y ahora, a disfrutar de esta deliciosa Jalea de Nísperos. Logré llenar tres frascos de vidrio, y una copa para el consumo al enfriarse. Pueden observar en la imagen siguiente, la brillantez de esta jalea al hacer contacto con la galleta, aunque se puede comer con pan salado o dulce, panquecas, o algún tipo de snack. En definitiva, pude degustar una deliciosa Jalea, preparada con el fruto del Níspero del Japón, que consumo desde que era una niña. Confieso que la sensación que me produjo en ese instante, fue de nostalgia...

And now, to enjoy this delicious loquat jelly. I have managed to fill three glass jars, and a glass to consume when cooling. You can see in the following image, the brightness of this jelly when it comes in contact with the cookie, although it can be eaten with salty or sweet bread, pancakes, or some kind of snack. In short, I was able to taste a delicious jelly, prepared with the fruit of the Japanese medlar tree, which I have eaten since I was a child. I confess that the sensation I felt at that moment was one of nostalgia....
