The best dishes are the ones that you can do from scratch at home. My wife ans I are big fans of Italian cusine and we both love pesto. But here in the Middle East in can get challenging to buy the real deal.

We were on a hunt for pesto and it was imposible to find one without potatoes (Wtf? Why?) or corn starch in it. The two things that don't belong in it at all.

So we had to make one on our own!

You need to start with basil leaves, freshly picked and rinsed.

Next ingredient is garlic. The more the better...as long as you don't have more garlic than basil :D

Then you need to cut the basil leaves and mix it with garlic.

Dice the parmigiano reggiano cheese and add it to basil and garlic mix.

Last 2 ingredients, pine nuts and olive oil of course. I don't think you can get Italian food without olive oil in it :) Put it in the blender and wait until it transforms into a thick sauce.
