So I decided to make our local delicacy which is ugba or African salad (oil bean).
Like I said before that my mother in-law came around and that she came with many food stuff this is one of them.
Ugba (oil bean) is a very delicious local delicacy that we value so much here in Nigeria.
When doing occasion like traditional marriage you must see ugba (oil bean) and other occasions .
I love ugba ( oil bean) so much that when ever am pregnant I do call my husband to buy it for me, is always my pregnancy carving.
My husband in the other hand love eating ugba, immediately his mother came he ask her if she comes with ugba (oil bean).
My mother in-law will say how can I forget to bring ugba (oil bean) I know is one of your favorite meal.
One thing I love about this ugba (oil bean) is, it doesn't require much ingredients and yet super delicious.
INGREDIENTS USED
1/4 paint of Ugba (oil bean)
6 piece of pepper
2 medium Onions
4 stems of Garden egg leaf
Salt to taste
A handful of baby garden egg
1/2 cup of red oil
1/4 cup of NGO.
NGO is a local spice gotten from soaking the ashes of burnt palm fruit leafs.
PROCEDURE
Ugba (oil bean) is a very delicious delicacy and is very simple to prepare here are the procedure.
STEP 1
Heat your ugba (oil bean) for a minute and with 1/4 cup of water after heating you bring it down.
STEP 2
Add your NGO in your red oil and stir till is thick and yellowish in color.
STEP 3
Slice one of your onions, garden egg leaf and pepper.
STEP 4
Add your NGO in your pot of Ugba (oil bean) and stir.
Add salt to taste stir again and add your onions.
Stir again before adding your pepper.
After all the ingredients you put your garden egg leaf, garden egg leaf is the last thing to put after putting your stir very well so that the ingredients will mix together.
STEP 5
This is the last step where you will slice your remaining onions, also wash your baby garden egg and put them on top of your ugba (oil bean) for garnishing.
With this process you get your delicious ugba, some people call it African salad (oil bean).
