Hello friends! cooking lovers wishing you a week of delicious meals, it's been a while since I last shared my recipes with you, but today I really want to tell you how to prepare pineapple cake, one of my favorites, this time I prepared it for my mother-in-law's birthday, taking advantage that I had all the ingredients at home and that she also likes it a lot. Besides, I feel it is a perfect dessert for these hot weather we have these days.

In my opinion it is a fairly simple recipe, where we can get a little complicated is in the realization of the caramel, I think that to achieve it we just need patience and never stop watching them, well without further ado I tell you how it goes.

Preparation
The first thing we will prepare is the caramel, we place the sugar in the mold where we will cook the cake and we put it on medium-high heat, patiently wait for the sugar to melt and take its color, once we get the amber color we lower the fire. (before I used to add water to make the caramel but it never really came out since I discovered this way of doing it I do not fail).

Now we prepare the cake mixture for it the first thing we must do is to beat the sugar with the margarine, until obtaining a well integrated cream, then add the eggs one by one, and beat for about 2 min, then we will add the flour and milk alternating one with the other, after we complete these, we can add a little vanilla if desired.

Once the mixture is ready, place it in the mold where we previously placed the diced pineapple or sliced pineapple as you prefer, and take it to the oven at 180 degrees for 40 minutes, we can check with the knife technique if it comes out dry and our cake is ready.

Once you take it out of the oven, let it warm to unmold and let it cool to consume, you can decorate it with meringue on the edge, eat it with ice cream, or just enjoy it as it comes out of the oven. I love the combination of sweetness and acidity that pineapple brings. I hope you can make the recipe and enjoy it as much as my family does.
