During the lockdown time, I had a lot of restrictions when it comes to cooking. Like we had limited gas supply at home. And had to make use of the induction heater which works through electricity. So I came up with limited items for this recipe and named it - poor man's pasta soup.

What should I call this? Poor man or woman's soup? Do let me know in the comments.

Simple recipe for homesteaders and offgrid citizen who prefer something in limited ingredients.

So how to make this recipe?

You don't need a lot of item to make this recipe. It's pretty simple with few things added into it which should be available at home.

Here are the ingredients

  • 1 chopped onion
  • 1 tomato puree
  • 1 garlic clove chopped
  • 2 tbsp corn flour
  • 1 tbsp chilly powder
  • oregano seasoning
  • corinader chopped
  • salt as per taste

Procedure

  • Take the bowl of macaroni or penny pasta. As you can see from the image below I have taken the elbow macaroni pasta. And make sure to boil it for 20 minutes.

  • Make sure that the macaroni or penny pasta is soft after boiling. Because we are adding it in soup, so it should be soft enough as we want to chew less and eat it with soup.

  • Take a pan. Add some oil into the pan. Then add some onion, garlic and saute it for few minutes. Then add some tomato puree into it. Make sure to let the mixture heat for 2 or 3 minutes.

  • Take one bowl and add the corn flour into it and make sure to fill the bowl with water and make sure you make paste out of corn flour.

  • Now add this paste into the pan's mixture. Let this mixture heat for 2 or so minutes. You can also add coconut milk half cup if you want a bit coconut taste into it.

  • Now let the mixture stir for 1 minute or so. After that add the penny pasta or elbow pasta into the mixture and stir it for 3 to 4 minutes.

  • If the mixture is a bit too thick then you should add 1 cup of water into the mixture. And keep the lid on the pan for next 5 minutes.

  • Open the lid, stir the pasta and make sure there is enough balance of pasta and the gravy.

Final output should look something like this depending on the ingredient you used.

Serve it with garnishing items as per your taste. I prefer adding the peri peri sauce or powder. You can also add the coriander powder or coconut grated.

I find this recipe a good recipe during the lockdown or stay at home times. Hopefully you liked this recipe and may consider making it if you want change of taste.
