Peri Peri masala has been famous in the most of the resto lately. It all kind of started from the Mcdonalds making this powder famous through the french fries and the peri peri masala. So here is my recipe for the Peri Peri Rice.
Here's my output of the recipe.
Ingredients
- capsicum
- peri peri masala
- cooked rice
- tomato
- carrot
- ginger
- garlic cloves
- onions
- green beans
- oregano
Method
First thing you should do is make sure to cook the rice and keep it aside for cooldown. I usually prepare the brown rice. I find it much tasty that way. You can also use the rice cooker or cook the left over rice again in the microwave. Usually this recipe is often served with the leftover or already cooked rice. Some people have told me that it tastes good with the fried rice too. However I prefer not to add the chinese ingredients into this recipe because soya and few other chinese items tend to be too heavy for the stomach.
Now that you have the rice prepared and set aside, let's discuss how to make the peri peri gravy.
- Take a pan. Add the capsicums, tomato, carrot, onion, ginger clove, oregano, green beans and corn pieces into the pan. You can add 2 tbsp olive oil into the pan and saute the mixture for the 5 minutes.
- Add the white pasta sauce powder into the saute vegetables.
- Make sure to also add the Peri Peri masala powder into the saute vegetables.
- Add 1/2 glass water into the mixture. Make sure that powder does not attached to the vegetables.
- Now make sure to create thick gravy around the vegetables.
- Now you can add this gravy on the top of the premade rice. Or you can mix the rice into this gravy and cook it for 2 minutes. Either way would work out.
Garnishing
Make sure to garnish the rice with the coriander and the mint. You can also add the lemon juice on the top of the rice. This way you can add more tangy taste to the rice.
Note:
Usually this rice tastes good if you consume it with the fried chicken or the boneless chicken pieces. Make sure to consume this with less spicy stuff so that the taste of the rice, peri peri gravy and the chicken kind of puts a taste into the mouth. You can also add it with the sandwiches and also for the salads too.
