Super esponjosa torta de piña. Receta [ESP/ENG]

Saludos cordiales mi querida comunidad de Hive, especialmente a los amantes de la cocina y que integran la prestigiosa comunidad de @Hivefood. Por acá les traigo otra de mis recetas favoritas: torta de piña o volteado de piña.

Warm greetings my dear Hive community, especially to the food lovers who are part of the prestigious @Hivefood community. Here I bring you another of my favorite recipes: pineapple cake or pineapple turnovers.

Esta torta la elaboré a solicitud de un vecino que es fanático de mi torta de piña, de hecho este pastel es el de mayor demanda, debido a que la miga queda muy esponjosa, y el caramelo queda como una mermelada de piña; es super rica.

I made this cake at the request of a neighbor who is a fan of my pineapple cake, in fact this cake is the most demanded, because the crumb is very fluffy, and the caramel is like a pineapple jam; it is super rich.

Ingredientes:

  • 2 1/2 taza de harina leudante o 350 gramos
  • 2 Tazas de azúcar o 400 gramos.
  • 3 huevos.
  • 100 gramos de margarina.
  • 1/2 taza d jugo de piña
  • 4 rodajas de piña (puede ser en almibar)
  • 1 pizca de sal
  • 1/4 cucharadita de bicarbonato de sodio

caramelo:

  • 3/4 tazas de azúcar
  • 7 cucharadas de jugo de piña

NOTA: Usar un molde de vidrio refractario de 15 centimetros de diámetro. En caso de usar molde de aluminio, se deberá forrar previamente con papel de aluminio para que las piñas no se peguen.

Ingredients:

  • 2 1/2 cup leavening flour or 350 grams.
  • 2 cups of sugar or 400 grams.
  • 3 eggs.
  • 100 grams of margarine.
  • 1/2 cup of pineapple juice.
  • 4 slices of pineapple (can be in syrup).
  • 1 pinch of salt
  • 1/4 teaspoon of baking soda.

caramel:

  • 3/4 cups sugar
  • 7 tablespoons pineapple juice

NOTE: Use a 15-centimeter diameter refractory glass mold. In case of using an aluminum mold, it should be previously lined with aluminum foil so that the pineapples do not stick.

  1. Lo primero es pelar la piña, cortarla en ruedas de aproximadamente 1 centímetro de espesor y extraerles el corazón. Si utiliza piña en almíbar, se obvia este paso.

  1. First, peel the pineapple, cut it into rounds about 1 centimeter thick and remove the core. If using pineapple in syrup, this step is omitted.

2.Licuar una rueda grande de piña con 1/2 taza de agua para hacer 3/4 tazas de jugo. Se utilizará 1/2 taza para la torta y el resto para el caramelo.
3.Cernir la harina en un tazón, agregar la sal y el bicarbonato. Revolver con una cuchara para que se unan los ingredientes y reservar.
4.Separar las yemas de las claras y reservar.
5.Batir las claras a punto de pico y reservar.
6.Cremar la margarina y el azúcar por 10 minutos. Añadir las yemas una a una,seguir batiendo,agregar poco a poco el jugo y la harina cernida hasta formar una masa.
7.Agregar a la masa las claras de huevo batidas a punto de pico, seguir batiendo en forma envolvente con cuchara de madera o miserable por 5 minutos. El punto de la masa se comprueba cuando se levanta y se deja caer lentamente

2.Blend a large pineapple wheel with 1/2 cup of water to make 3/4 cup of juice. 1/2 cup will be used for the cake and the rest for the caramel.
3.Sift the flour into a bowl, add the salt and baking soda. Stir with a spoon to combine the ingredients and set aside.
4.Separate the egg yolks from the egg whites and set aside.
5.Beat the egg whites until stiff peaks and set aside.
6.Cream the margarine and sugar for 10 minutes. Add the egg yolks one by one, continue beating, add little by little the juice and the sifted flour until a dough is formed.
7.Add to the dough the egg whites beaten to stiff peaks, continue beating in an enveloping way with a wooden spoon for 5 minutes. The point of the dough is checked when it is lifted and dropped slowly.

8.Procedemos a preparar el caramelo colocando en primer lugar, el azúcar en una paila y la llevamos al fuego medio hasta que se derrita y se forme un caramelo espeso.
9.Cuando el azúcar se derrita, batir constantemente y agregar una a una las siete cucharadas de jugo de piña previamente calentado. Se debe tener cuidado al agregar el jugo por la reacción que se forma.
10.Seguir revolviendo hasta que el caramelo tome un color dorado y su consistencia sea algo espesa. Debe cuidar que no se quema. Si esto sucede debe desecharlo y volver a comenzar, debido a que el caramelo cuando se quema se pone amargo.

8.Proceed to prepare the caramel by first placing the sugar in a saucepan and heat it over medium heat until it melts and forms a thick caramel.
9.When the sugar melts, whisk constantly and add one by one the seven tablespoons of previously heated pineapple juice. Be careful when adding the juice because of the reaction that is formed.
10.Continue stirring until the caramel takes a golden color and its consistency is somewhat thick. Care should be taken that it does not burn. If this happens you should discard it and start again, because the caramel becomes bitter when it burns.

11.Verter el caramelo en el molde cuidando de repartirlo por todos los lados del molde. Esperar 5 minutos y proceder a colocar las piñas de la forma que desee para decorar la torta.

11.Pour the caramel into the mold taking care to spread it on all sides of the mold. Wait 5 minutes and proceed to place the pineapples in the desired shape to decorate the cake.

12.Verter la masa encima de las piñas, y se lleva al horno a una temperatura de 160 grados por una hora, esto depende del tipo de horno.
13.Solo después de haber transcurrido mas de media hora es que debe abrir el horno para chequear la torta con un palillo. Nunca antes porque se baja la torta.
14.Cumplido el tiempo y cuando el palillo salga seco, sacar la torta del horno, esperar 10 minutos y desmoldar caliente.
15.Opcional puede colocar guindas en el centro de las ruedas de piña para decorar.

12.Pour the dough over the pineapples, and bake in the oven at a temperature of 160 degrees for one hour, this depends on the type of oven.
13.Only after more than half an hour has passed should you open the oven to check the cake with a toothpick. Never before because the cake will fall.
14.When the time is up and the toothpick comes out dry, take the cake out of the oven, wait 10 minutes and unmold it warm.
15.Optional you can place cherries in the center of the pineapple rounds to decorate.

Deben tener mucho cuidado al momento de desmoldar la torta. Esto se debe hacer con paciencia, introduciendo un cuchillo punta redonda por los bordes para verificar que la torta esté desprendida, luego voltear el molde y darle pequeños golpes hasta sentir que se despegó por completo.
Con esta receta se obtiene una torta de 950 gramos y alcanza para 10 comensales aproximadamente.

You must be very careful when unmolding the cake. This should be done with patience, inserting a round-tipped knife along the edges to verify that the cake is detached, then turn the mold over and give it small blows until you feel that it is completely detached.
With this recipe you get a 950 grams cake and it is enough for approximately 10 people.
