I used vegetarian "beefless" tips (2 bags of Gardein) instead of meat, which cut down a lot of steps because I could just add them in to thaw. I also used 3 packets of soba ramen instead, and it turned out fine. The texture felt cheaper than real soba, but, hey, it was cheaper.
