How's everyone doing? I'm back with another Japanese recipe, following my tuna mayo onigiri. This time, it's Japanese curry, which I often see featured in anime and Japanese TV shows, alongside onigiri and ramen. Characters often talk about how delicious curry is, and after trying it for the first time, I started saying the same thing. I ended up liking it so much that it's become a dish I eat around 4–8 times a month.
At first, I thought it would be complicated to make, but it turned out that the hardest part (if there even was one) was chopping the vegetables and waiting. Today, I'll show you how to make it using ready-made roux cubes, the kind you can buy prepackaged. That way, you won't have to make the sauce from scratch.
It's a stew that you can serve with white rice, which is why it's called kare reisu, literally meaning "curry rice." Of course, there are other kinds of curry, but Japanese curry is usually milder and uses roux, which gives it that thick texture.
Ready-made curry roux cubes were introduced in the 1950s, and they usually come in mild, medium, and hot varieties. I recommend starting with mild and working your way up if you like (there's no way I'm going beyond medium 🥵).
Qué necesitas ✳️ What You'll Need
Esto es suficiente para unas 5-6 porciones:
This should be enough for about 5–6 servings:
| Español | English |
|---|---|
| Meat (about 250 g; you can use beef, chicken, pork, or whatever you have). |
| Cebolla (1 y media) | Onion (1½) |
| Zanahoria (media) | Carrot (½) |
| Papa (una) | Potato (1) |
| Aceite (2 cucharadas) | Oil (2 tablespoons) |
| Pastillas de roux (media cajita) | Curry roux cubes (½ a box) |
| Agua | Water |
So, if you're making dinner for three people with a normal appetite 🫢, the amounts above should leave you with enough for lunch the next day, too.
Paso a paso ✳️ Step by Step
| Español | English |
|---|---|
Si no las cortas parejo entonces algunas estarán blandas mientras las demás no. | Cut the meat, onion, carrot, and potato into medium-sized pieces. If you don't cut them evenly, some may become soft while others are still firm. |
| Add the 2 tablespoons of oil to a pot over medium heat and brown the meat. |
| Echa las verduras y revuelve unos minutos. | Add the vegetables and stir for a few minutes. |
| Add water, but don't overdo it. Just add enough to cover the ingredients. Since the vegetables release liquid as they cook, adding too much will make the curry take longer to thicken. |
| Let everything cook until the potato and carrot are tender. Pierce them with a fork to check. |
| Turn off the heat before adding the roux. Break up the cubes and add them one or two at a time so they dissolve properly without leaving lumps. |
| Stir until everything has dissolved. Turn the heat back on low and let it cook for about 5 minutes, until the curry thickens. Stir occasionally to keep it from sticking to the bottom of the pot. |
| Cocina el arroz aparte y, si tienes arrocera, mejor. | Cook the rice separately. If you have a rice cooker, even better. |
| Finally, serve a generous portion of rice on a plate and spoon the curry beside it (or on top, if, like me, you prefer to mix everything together). |
Cómo acompañarlo ✳️ What to Serve It With
If you happen to find fukujinzuke, give it a try. These are reddish pickled vegetables with a tangy flavor that contrasts nicely with the thick curry. But if you can't find them, any pickles you have on hand will do (I use pickled cucumber).
You can also add other toppings, such as a boiled egg or a breaded pork cutlet (tonkatsu, which I'll also show you how to make in a future post). Add the cutlet and you've got yourself katsu curry.
Japanese curry often tastes even better the next day, so make extra. You can keep it in the fridge for a couple of days, but don't store it together with the rice.
Finally, have you ever made curry using roux cubes, or do you prepare it another way? If you give this recipe a try, tell me which spice level you chose and whether you had any leftovers for the next day.
